Vegtable and Bacon soup?!


Question: Im making some veggie and bacon soup. I have put carrots, celery, potato, carrots, parsnip, onion its on the boil with abit of pepper , salt, dried parsley and a sprinkle of curry pouder.

Do you think i need to add some sort of stock?. all we have in the cubbord is chicken stock. So that wouldnt go well with the bacon? Or if i added abit of raw bacon as well as some fried would that be enough flavour?.

Chicken stock will be fine in your soup. Use it sparingly, about half what you would use for regular stock. Because the bacon and the veggies will flavor the broth too.

Here in the US the soup you are making usually has cooked beans in it, such as navy beans or kidney beans. Bean & bacon soup!

Either way, it'll work out fine. I wouldn't add raw bacon, but the stock or not is fine.

Sounds pretty good. Maybe you could add some sausage bits

Why not make it a creamy Veg and Bacon? add some milk (1 cup per half gallon) and flour (a little at a time and slowly stirring it in until it's the thickness you want) when it's nearly done for a nice creamy texture.
