Sealing them in small numbers in vacuum bags or containers will help them stay fresh for the longest period of time.

Lemon bars will probably keep for less time, depending on your recipe. If you used a softer filling, they might only stay for a week or two. If they are somewhat harder like the biscotti, they should keep for almost as long.

As for the refrigerator, they should keep for roughly the same time, although you might want to avoid this. Refrigerators have the tendency to dry things out. You also might encounter problems with condensation in your containers that could lead to mold developing.
