Okay, you can store them for up to three weeks in the refrigerator or up to 3 months in the freezer if you pack them loosely with wax paper between the layers and BE SURE THE SEAL IS FIRM to keep them 'properly moist' ...

get a cookie tin and keep them that way, refrigeration dries them out

Seal them well and freeze, but they don't taste quite the same to me when thawed.

COCONUT MACAROONS

2 egg whites (from large eggs)
? tsp. vanilla
1 ash salt
2/3 cup granulated sugar
1 3-?-oz. can (1-1/3 cups) flaked coconut
Red and green candied cherries, cut in quarters

Preheat oven to 325 degrees F. Lightly grease cookie sheet & set aside. Beat egg whites, vanilla extract & salt until soft peaks form. Fold in coconut. Garnish the top of each macaroon with ? of a glazed cherry. Drop from a teaspoon onto prepared cookie sheet, 1-?” apart. Bake about 20 minutes. Cool completely on wire rack.

Yield: 2 Dozen Macaroons

Macaroons are very vulnerable to humidity. If not properly sealed, they will absorb the humidity from the air & also the smell from your freezer or refridgerator. Whatever you do, make sure they are seperated (by waxed paper or parchement paper) and SEALED!!

If you are freezing for a party, I would run a test batch. You would hate to go through the work for macaroons, freeze them & have them tasting like whatever is in your freezer... YUCK!!
