Recipe for breakfast casserole or CHRISTMAS breakfast?!


Question: About two years ago, at Christmas, I had a really good recipe for a breakfast casserole. It was where you could prepare it the night before, refrigerate it overnight, and bake it the next morning. I did this for Christmas and it was so easy! If anyone would like to share their recipe for a breakfast Casserole or any other Christmas Breakfast meal, I would appreciate it! MERRY CHRISTMAS EVERYONE!!!!

Here's one for a breakfast casserole and also one for overnight French toast you can make the night before and just throw in the oven when you wake up........

Weekend Brunch Casserole

INGREDIENTS
1 pound Bob Evans? Original Recipe Sausage Roll
2 cups shredded mozzarella cheese
1 (8 ounce) can refrigerated crescent dinner rolls
4 eggs, beaten
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper

DIRECTIONS
Preheat oven to 425 degrees F. Crumble and cook sausage in medium skillet over medium heat until browned. Drain.
Line bottom of greased 13 x 9 inch baking dish with crescent roll dough, firmly pressing perforations to seal. Sprinkle with sausage and cheese. Combine remaining ingredients in medium bowl until blended; pour over sausage.
Bake 15 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.

Overnight French Toast II

INGREDIENTS
2 tablespoons corn syrup
1/2 cup butter
1 cup packed brown sugar
1 (1 pound) loaf French bread, sliced
5 eggs
1 1/2 cups milk
1 teaspoon vanilla extract
1/4 teaspoon salt

DIRECTIONS
Combine the corn syrup , butter, and brown sugar in a small saucepan and simmer until the sugar has melted. Pour this mixture over the bottom of a greased 9x13 inch casserole dish.

Place the bread slices over the sugar-butter mixture in the dish. In a bowl, beat together the eggs, milk, vanilla, and salt; pour this mixture over the bread. Cover the dish and let it stand in the refrigerator overnight.
The next morning, preheat oven to 350 degrees F (175 degrees C).

Uncover the pan and bake for 45 minutes. Serve while hot or warm or the French toast will harden in the pan. It can be reheated.

  • Overnight Mushroom Egg Casserole
    INGREDIENTS
    5 tablespoons butter, divided
    1/3 cup all-purpose flour
    1 1/2 cups milk
    1 (4.5 ounce) jar sliced mushrooms, drained
    10 eggs
    2/3 cup half-and-half cream
    1/4 teaspoon salt
    1/8 teaspoon pepper
    10 bacon strips, cooked and crumbled
    DIRECTIONS
    In a saucepan, melt 3 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the mushrooms; set aside. In a bowl, whisk the eggs, cream, salt and pepper. In a skillet, heat the remaining butter until hot. Add egg mixture; cook and stir over medium heat until eggs are completely set. Transfer to a greased 11-in. x 7-in. x 2-in. baking dish; top with mushroom mixture. Sprinkle with bacon. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325 degrees F for 32-36 minutes or until heated through.

    I have one that I make so
    1 lb of sausage
    6 eggs
    6 servings of rice
    2 cups shredded cheese

    I brown the sausage crumbled, scramble the eggs with 1/2 the cheese and then mix in the rice and cover with the rest of the cheese. I usually put it in the oven at 400 for 10 minutes when it's done but you can do for 15, I think that should make it all hot and yummy. You can keep a can of fruit salad in the fridge and some crescent rolls to cook that morning too.

    Tried to find recipe I had called Wifesaver for Christmas morn....as I recall it's pretty easy.
    You butter and line a baking casserole dish with 6 slices of bread, top with ham slices and grated cheddar, then top with 6 more slices of bread. Beat 6 eggs and cup of milk together and pour over contents of casserole. Cover and refrigerate overnight. In morning, uncover and bake at 350 for about 1/2 hr. (Make sure dish isn't too cold when you put it in the oven). Maybe someone else will tell you if I've left anything out. Merry Christmas to you too.

    scramble up eggs, cook up sausage and bacon, have hashbrowns, diced onions and peppers, gravy, and cheese. layer pan with hashbrowns, then eggs, cheese, sausage, bacon, onions and peppers, then top with more hashbrowns. bake for 30 min. or until done. put gravy on top. oh, 350 is good for temp. if you dont want gravy, try salsa and hot peppers.
