Gooseberry, seriously its fantastic cuts through any greasiness.

Prune Sauce
12oz no-soak stoned prunes, chopped
1 medium cooking apple, peeled, cored and chopped
Grated rind and juice of ? lemon
3 tablespoons of red wine
1 stick of cinnamon
Salt and pepper
Place the prunes, apple, lemon rind and juice with the cinnamon stick into a saucepan, add the wine and cook on a medium heat until the fruit is soft. Then remove the cinnamon stick and blend the sauce using a food processor or blender. Season to taste and set aside until needed. The sauce can be made a few days earlier and should be refrigerated. Gently reheat when ready to serve the meal.

Sauce for the Goose is sauce for the Gander

A rich bread sauce made with full cream milk,cream,bread crumbs,cloves and a bit of grated nutmeg.
Cranberry sauce goes very well to because goose is a very rich bird and the tartness of the cranberry's is perfect for it! I'm having goose and these are the two sauces we are having.

You seriously can't go wrong with fresh cranberry-orange chutney and goose. It's so good it will make you cry!

Your favorite fruit made into a sauce or marmalade, but if you've seasoned the goose and cooked it well you dont need it.

INGREDIENTS:
goose breast
orange juice
oranges
lemons
PREPARATION:

I wash the goose breast in cold water and put it in a pressure cooker with a cup of orange juice and some slices of oranges and lemons and let it cook for about 15 minutes. It is very moist and has the nice taste of orange and lemons so we love it that way.
