Does anyone have a good recipe for some kind of breakfast casserole?!

These are the two I use... enjoy!

Christmas Brunch Casserole

1 pound bacon
1 tablespoon butter
2 onions, chopped
2 cups fresh sliced mushrooms
4 cups frozen hash brown potatoes, thawed
1 teaspoon salt
1/4 teaspoon garlic salt
1/2 teaspoon ground black pepper
4 eggs
1 1/2 cups milk
1 pinch dried parsley
1 cup shredded Cheddar cheese

Preheat oven to 400 degrees F. Grease a 9x13 inch casserole dish.

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside. In a separate skillet, melt the butter and fry onions and mushrooms until tender.

Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with bacon, then onions and mushrooms.

In a large bowl, beat eggs with milk and parsley. Pour over casserole. Top with grated cheese. Cover and refrigerate overnight.

Bake in preheated oven for 1 hour or until set. If preparing and baking the same day, cook for 45 minutes.

Breakfast Casserole

1 pound bacon
1/4 cup diced onion
1/4 cup diced green bell pepper
3 cups shredded Cheddar cheese
8 eggs
2 cups milk
1 (16 ounce) package frozen hash brown potatoes, thawed

Preheat oven to 350 degrees F. Lightly grease a 7x11 inch casserole dish.

In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion and green pepper. Stir in the thawed hash browns. Pour mixture into prepared casserole.

Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set.

Huevos Ranchero Casserole

Make it like lasagna, but use tortillas, refried beans, cheese, salsa, black olives, scrambled eggs. Top with sour cream and guac when it comes out of the oven

Make ahead casserole

INGREDIENTS
7 slices white bread, crusts removed and cubed
2 cups shredded Cheddar cheese
6 eggs
3 cups milk
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
6 bacon strips, cooked and crumbled


DIRECTIONS
In a greased 11-in. x 7-in. x 2-in. baking dish, combine the bread cubes and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Top with bacon. Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 50-55 minutes or until a knife inserted near the center comes out clean.

My mom always makes this one that is an overnight one. There isn't an exact recipe, it is just sorta as you go. =)

Tear the crusts off (very important) slightly dried out bread and tear into irregular pieces. Lay them down in a single layer of a casserole dish. Brown and crumble sausage and drain very well, and mix with condensed cream of mushroom soup. Spread this over the bread layer. If you want top with sliced mushrooms (gotta), sliced onions, diced bell peppers, etc. My dad likes sliced jalapenos. Top with shredded cheese.

Whisk some eggs with a small amount of milk and pour over the assembled casserole. Cover and keep in the fridge overnight. Bake in a 350 F oven until you can the cheese and eggs are slightly browned, and you can shake the dish and the center doesn't jiggle. Usually about 45 minutes for a 9"x12" casserole dish.

This dish always bespoke of holiday mornings or preparing for an early out road trip. good times.

Here's our family Night Before Thanksgiving or Christmas casserole. I'm not a morning person, so I do this the night before. Get up. Put in oven. Try to wake up. It's very yummy.
