Having trouble rolling chocolate into balls for truffles?!


Question: I am making truffles, and I have cooled the chocolate. Now, I have to roll them into balls, but the problem is, the chocolate is melting in my hands. I don't have a melon baller, which I am sure would work perfect. Any hints????

You need to make sure the kitchen is cooler than normal, keep your hands dusted with cocoa powder and work quickly.

If you have an old piece of marble or polished granite you can also use that to roll the truffle ganache on into balls while working. The marble/granite stays cool by itself if not near heat. (You can also put the pot of truffle ganache into another bowl that has ice to keep it cool while you work.)

Try to avoid working around any sources of heat - stoves, microwaves, etc. If your kitchen has a 'cold' spot and you can work there, great.

I see the guys on TV use plastic gloves. it may still melt but I think it helps kep from sticking to your hand.

I also see them use flower on their hands

Did you put it in the refrigerator? You should have try that and then cover your hands in butter.

Stick them back in the fridge to harden up.

I agree with the refrigeration idea, plus you could try dusting your hands in cocoa powder (in a similar manner to dusting w/flour when making pie crust, etc.) before rolling.
