No, they won't taste as good by a long way and you will only be making extra work for yourself. Coincidentally, I have just made some fresh chips, they are cooking now. It took a few minutes to peel and chop them and they will be delicious.

Peeled pototoes are liable to go black. I put mine unpeeled in a deep plastic container with a lid on in the fridge. They keep for quite a long time.

if you blanche they should taste alright blanche them for a couple of minutes in boiling water drain them of and pat them dry with kichen towel they should taste o.k.

One thing about potatoes, I have made hash browns from scratch with a raw potato and by the time you get them shredded, they are already turning gray so anything you do to that potato besides leaving it whole - other than cooking it straight away - will turn it gray.

You will need to par boil them before freezing (about four, five mins when water starts to boils), you should be able to cook them from frozen.
