Recipe for Dry Vermouth Cream sauce??!


Question: I had a knock-out pasta dish the other night that had salmon and a dry vermouth cream sauce, with red pepper flakes and grape tomatoes. Does anyone have a good sauce recipe that would come close to replicating this style of sauce?

2 tablespoons all-purpose flour
2 tablespoons butter or margarine
1/4 cup sweet vermouth
1/2 cup whipping cream
1/4 teaspoon salt
1/8 teaspoon pepper
Melt the butter in a large skillet over medium heat.
Add the flour and cook for about 3 minutes, stirring occasionally. Add vermouth to the skillet and scrape the pan to loosen bits stuck to the bottom.
Bring to a boil and reduce the volume of liquid by half.
Stir in cream, salt, and pepper and turn heat down to low, cook about 2 min more.

try and look for a pink-vodka sauce...emeril has a great one (check out www.food.com)
