what we do is have a 'food schedule' so every day of the week we have a certain food that i cook, that way I can look online in advance for a good recipe, and I'm not rushing last minute to throw something together. that helps me get great things made..not just half-baked (ha ha sorry about the pun) creations...
For example, monday is left-overs, tuesday is redmeat, wednesday is chicken, thursday is pasta, friday is fish..sat is crockpot, and sunday is either eat out or big-family dinner.

A great simple recipe that my fiance and I absolutely love is garlic parmesan chicken.

1. Three boneless skinless chicken breasts
2. 1 T. Olive Oil
3. 1/2 clove garlic, minced
4. 1/2 cup bread crumbs
5. 1/3 cup grated parmesan cheese
6. 1/2 t dried basil
7. 1/8 t ground black pepper

1. Preheat your oven to 350 F
2. Grease a 9 x 13 inch baking dish
3. In a bowl blend the olive oil and garlic
4. In a separate bowl combine all of the dry ingredients
5. Coat the chicken in the garlic, olive oil mixture and then in the bread crumb mixture.
6. Place the chicken in the baking dish and coat with the remaining crumb mixture
7. Cook until the chicken has reached an internal temperature of 165 F and is no longer pink on the inside.

I like to serve it with a side of Lipton flavored noodles and some bread.

The olive oil and bread crumb amounts are all subjective based on the number of people you are serving, as well as the amount of chicken.

'Bachelor' TV Dinners - good, hearty, hot meal. Multiply the portions for as large a family as you need to serve.

Ingredients:

Potato
Carrot
Onion - not the purple type
Celery (optional)
80% ground chuck (has better beef flavor than ground beef)
Aluminum pie plate or foil baking dish.

Peal the potato and cut into 'dimes' like you are making potatos au gratin. Do the same with the carrot and onion leaving the layers of the onion together.

Line the bottom of the pan with the potatos as deep as you'd like. Put the carrots on top of the potatos - they don't have to cover them. Then put the onions on top of that with the celery if you'd like. Salt and pepper the whole works.

Take your ground chuck and season it with salt (kosher - it tastes better), pepper, a bit of chili powder, some garlic powder, and maybe even a bit of Worchestershire sauce if you like a bit of spiciness. Mix it all up and mold it into patties that will be the serving size per person (usually about a third or half pound). Put the patties on top of the whole mess and cover it all with foil tightly.

Bake at 300 for about 45 minutes. Check the potatoes and the patties. When the meat is done, usually everything else is too.

To simplify, you can season the meat with a combo of meatloaf seasoning and maybe a bit of taco seasoning. My brother always ate his with ketchup on the meat like meatloaf.

That's just one dish that I love for winter - if you want, I've got a great recipe for cheddar ale soup that just rocks when served with a french bagguette from Panera.

I'm a mom of three somewhat picky boys, and these are some they like If your kids like mildly spicy food, one to try, if not leave out rotel in half for the kids and put it in another pan for the adults.
Taco Soup
1 can pinto beans
1 can mild rotel
1 can corn
1 can tomatoes
1 pkg taco season
1 lb ground beef cooked & drained
1 can water
put all the above in big pot and simmer for 30 or more min.
we eat it with fritos or corn chips or even soft shells.
Also use the same combination just leave out the liquid, spread the chips in a 9x13 pan put the taco mix over the chips, sprinkle with cheese and heat it up.

A very easy way to make a chicken fettuccine type dish is to use canned chicken and mix it in with a jar of white Ragu in a sauce pan and heat it up. Cook & drain the noodles then mix the 2 together , eat it with garlic bread.

It's very easy to bake bonless chicken, pork chops, steak, marinade it in ziplock back overnight is best, but if you forget a few hrs even 30 min. will help the flavor. Marinade with almost anything, worscherire sause, store bought marinades, diluted bbq sauce works in a pinch too.Just put in the oven on pan with sides at 350, boneless chicken 25-30 min you its done when its not pink. pork is a little longer and it will look sortof greyish when cut, cook your steaks to your preference.
