About the desert, it'll take you about 40 min to make this cake, it's swedish, it's called Kladdkaka, and it's delicious:
Ingredients:
3dl sugar (~1 1/4 cup)
1,5 dl flour (~1/2 cup)
4 tbl cocoa
2 tbl vanilla sugar
2 eggs
100 grams butter (~16 ounces)
Breadcrumbs (about a handful).
Whipped cream (when served).
Recipe:
Pre-heat oven to 185 C / 375 F.
Grease a baking pan and coat with a thin layer of breadcrumbs. Set aside.
Melt the butter on low heat.
In large bowl beat the eggs and sugar until fluffy. Then add the flour, cocoa, and vanilla sugar.
After all the ingredients are combined, slowly add the melted butter mixing the batter well.
Pour bake mixture into baking pan.
Bake at 185 C / 375 F for approximately 25 to 30+ minutes.
Be sure to check the "brownie" every once in a while, as it can quickly dry out.
It should be very moist and gooey in the middle but firm around the edge.
Bit rude to have them ask you to bring something on short notice...anyway...here's something quick and simple Ambrosia...two large cans of fruit cocktail...drain the juice ...add one large tub of cool whip have another on hand if needed...mix cool whip and fruit cocktail together...then mix in shredded toasted coconut(take shredded coconuy place some on sheet pan toast in oven at 375 degrees...keep an eye on it...should be lightly toasted in about 10 mins.)

U can make a fruit salad with your favorit fruit mixed with sour cream and whip cream or cool whip

Make a quick pasta salad using things from the olive or tapas bar if you have one in your grocery store. Just make up the pasta, and toss in the stuff you picked up. Or just get jarred kalamata green and black olives, jarred roasted peppers, mozzarella, sun dried tomatoes packed in oil..use the oil and dressing this stuff was jarred in as the pasta dressing.
Well, for a desert, hurry hurry hurry, go to a grocery store and buy a cake called Tres Leche! It's a sponge cake meaning three milks (tres leche :]) but it's freakin' awsome! It tastes sooo good!
