What kind of apples work best in apple pie and/or apple crisp?!
I usually use royal gala and it tastes really good, but I'm wondering if another type of apple is better.

My mom usually uses Granny Smith... or Gala like you said. I like granny smith, because the sour mixes with the sweet.

Pippin is the best tasting (like those old fashioned apple pies we used to buy at the bakery) and hold their shape well when cooked but they are hard to find and if found, more expensive than other apples.
I'm always looking for Pippin apples in the grocery stores. Found it at one supermarket recently.
granny smith,they are firm ,tart and when you stew them they are yummy. i also bake them. i cook my apples before i put them in the pie. i want to know what they taste like,then i put my bottom crust in the pie plate and into the oven,bake it then put in my apples. either i Cris cross it or put a full cover on. no guessing . i have won a ribbon or two with my pies. glass pie plates is the way to go. i also lightly dust my bottom crust with Cinnamon and sugar

i like to use a combination of apples - try this
2 granny smith for firmness and tartness
2 braeburn or fuji for sweetness and texture
2 red rome (hard to find) or other favorite that will cook down a bit more - look for a "cooking apple." it will make a natural applesauce that will help bind your apples together.
i often use what looks best in the market - but always aim to have an equal ration of firm, sweet, and cooking.

Granny Smiths are real good in pie

Granny Smith is typically what my mom & ex-wife used, but I'm convinced (and I convinced my mom finally) that I make a better pie by mixing at least two varieties -- like Granny Smith (G.S.) & Macintosh, or G.S. & Golden/Yellow Delicious to cut the tartness of the G.S. apples.
