Old Fashioned baked beans recipe?!
Answers: Does anyone know of a good baked beans recipe using dry beans?
Fill a pan with warm water. Pour your beans in it. Discard any that float and remove any stones or other non-food items. Let the beans soak over night.
In the morning, turn the heat on the burner. When the beans come to a boil, turn down the heat and let them simmer. How long depends on what kind of beans you're using. Navy beans, 2 hours, kidney beans and black beans, three hours.
Taste one after the time to see if they've gotten tender enough.
After the beans are cooked, drain put them in a crock or casserole that you can cover and add:
1 large onion, chopped,
1 tsp dry mustard,
1 cup dark molasses
1/2 c ketchup (optional)
salt & pepper to taste
1/2 - 1 lb bacon, chopped (don't need to cook it first)
Cover and bake at 300 for 5-6 hours. Every hour, check them. Add water if needed (I use the water I drained from the beans) and stir. Cover and continue baking. You can leave them uncovered for the last hour if they are too moist.
After the beans are cooked, you can also combine all the ingredients in a crock pot and cook on low for 8-10 hours.

DIRECTIONS
1. Place beans in a Dutch oven or kettle; add enough water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour.
2. Drain and rinse beans, discarding liquid. Return beans to pan. Add water and salt; bring to a boil. Reduce heat; cover and simmer for 1 to 1-1/4 hours or until beans are tender. Drain, reserving 2 cups cooking liquid.
3. In a greased 13-in. x 9-in. x 2-in. baking dish, combine the beans, onion, mustard, brown sugar, molasses, bacon and 1 cup reserved cooking liquid. Cover and bake at 400 degrees F for 45 minutes or until beans have reached desired thickness, stirring occasionally (add additional reserved cooking liquid if needed).

DIRECTIONS
1. Place beans and water in a large pot, and bring to a boil. Reduce heat to medium, and continue cooking 1 hour, stirring occasionally, until beans are tender. Drain, and transfer to a large casserole dish.
2. Preheat oven to 300 degrees F (150 degrees C).
3. Heat the olive oil in a skillet over medium heat. Stir in the onions, and cook until tender. Mix in garlic, and cook until golden brown. Mix onions and garlic into casserole dish with the beans. Stir in the tomato sauce. Mix in brown sugar, molasses, vinegar, bay leaves, mustard, pepper, nutmeg, and cinnamon.
4. Cover and bake 3 1/2 hours in the preheated oven, stirring frequently and adding water if necessary. Remove cover, and continue baking 30 minutes.

2 lbs yellow-eyed beans
1 teaspoon baking soda
1 medium onion
1/2 lb salt pork
1/4 cup brown sugar
1/2 cup molasses
2 teaspoons dry mustard
1/2 teaspoon salt
Soak beans overnight, well covered with cold water.
Pour off soaking water and pick over beans to remove any bad ones, or debris.
Put beans in a pot.
Cover with fresh cold water and add 1 tsp. baking soda.
Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
Cut onion in quarters and put in bottom of a bean crock or large casserole.
Add the partially cooked beans.
Put cut up salt pork on top.
(Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
Pour over the beans.
Add more boiling water, if needed, to come just to the top of the beans.
Also, if needed during baking tme, add more boiling water.
Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.
