I cut mine in strips and bread them with either shake and bake, or make my own breading with italian bread crumbs, parmesan, and eggs to hold it together.. Bake it in the oven at 350 for 15 to 20 minutes, sprinkle some mozzarella cheese on, and lay a few strips on a bed of pasta with my favorite spaghetti sauce..

My favorite thing to do is to marinate it in some italian dressing and then grill it.

I love butter chicken....very tasty if you're not worried about gaining weight, or lost hope in ever losing weight (like me) ;)

Our favorite thing to do with boneless chicken breasts are to make chicken tacos.
1. Boil the chicken, then shred the meat when its done.
2. Throw the chicken in a pot along with a large jar of salsa and taco seasoning. Heat.
3. Put mixture into taco shell along with your favorite mixings and enjoy.

There are tons of things you can do with chicken breasts that are delicious and easy. My favorite meat to cook with.

Parmesan Crusted Chicken: - 4 servings

1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves
4 tsp. Italian seasoned dry bread crumbs

Combine mayonnaise and cheese; spread on chicken. Sprinkle with bread crumbs. Bake at 425* - 20 minutes, or until thoroughly cooked.


"Campbell's One-Dish Chicken and Rice Bake" - Serves 4

1 (10 3/4 oz.) can cream of mushroom soup
1 cup water
3/4 cup uncooked regular white rice
1/4 tsp. paprika
1/4 tsp. pepper
4 boneless, skinless chicken breast halves

In 2-quart shallow baking dish mix soup, water, rice, paprika and pepper. Place chicken on rice mixture; sprinkle with additional paprika and pepper. Cover; bake at 375* - 45 minutes or until chicken and rice are done.


"Spinach Crab Chicken" - 4 servings

1/2 cup finely chopped onion
1/4 cup chopped fresh mushrooms
1/4 cup finely chopped celery
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. salt; divided
1 cup chicken broth
1/2 cup milk
4 boneless, skinless chicken breast halves
1/8 tsp. white pepper
1/2 cup dry bread crumbs
1 (6 oz.) can crabmeat; drained, flaked and cartilage removed
12 fresh spinach leaves; chopped
1 tbsp. minced fresh parsley
1 cup shredded Swiss cheese
Hot cooked rice

For sauce, in a skillet, saute the onion, mushrooms and celery in butter until tender. Stir in flour and 1/4 tsp. salt until blended; gradually add broth and milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from heat.
Flatten chicken to 1/4" thickness; sprinkle with pepper and remaining salt. In a bowl, combine the bread crumbs, crab, spinach and parsley; stir in 1/2 cup sauce. Spoon 1/4 cup down the center of each chicken breast half. Roll up; secure with toothpicks. Place seam-side down in a greased 13x9x2" baking dish. Top with remaining sauce.
Cover and bake at 375* for 35-45 minutes or until juices run clear. Sprinkle with cheese; broil 4-6" from the heat for 5 minutes or until lightly browned. Discard the toothpicks. Serve with rice.

I have a very simple recipe that works if you like cheese like I do.

Lay the chicken in a pan. I usually put some chicken type spice on top. Then you put Campbell's cheddar cheese soup straight out of the can on top. Finish by sprinkling a layer of shredded cheddar cheese.

Bake 50 minutes or until done. It's very easy.

You could make Chicken Alfredo or one of my favorites is Bourbon Chicken. I use the recipe from myrecipes.com. This is their recipe, but I leave out the shallots.

Ingredients
4 (6-ounce) skinless, boneless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon canola oil
1 tablespoon butter
1/3 cup minced shallots
1/4 cup bourbon
3/4 cup fat-free, less-sodium chicken broth
2 teaspoons tomato-based barbecue sauce


Preparation
Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or rolling pin. Sprinkle chicken evenly with salt and pepper.
Heat oil and butter in a large nonstick skillet over medium heat. Add chicken; cook 6 minutes on each side or until done. Remove chicken from pan; keep warm.

Add shallots to pan; cook 1 minute, stirring constantly. Add bourbon to pan; bring to a boil, scraping pan to loosen browned pits. Cook until bourbon mixture is reduced to 2 tablespoons (about 5 minutes). Add broth and barbecue sauce; cook until broth mixture is reduced to 1/2 cup (about 3 minutes). Serve sauce over chicken.

Yield
4 servings (serving size: 1 chicken breast half and 2 tablespoons sauce)

Marinate them in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

Layer a pan with chicken breast, pour over a can of cream of chicken soup diluted with 1/-3/4 cup of milk
Take a box of stuffing mix mix according to box directions add a bit more water spoon that over the top of the soup and chicken and bake, you can sprinkle with shredded cheese to add flare. Tastes really good and very easy to make.
