Sausage and Cheddar Quiche


INGREDIENTS:

Crust:
1 1/3 cups all-purpose flour
1/8 teaspoon salt

1/2 cup cold butter, cut in small pieces
2 to 3 tablespoons ice-cold water

Filling:
6 to 8 ounces sausage, cooked, drained, and crumbled
4 large eggs
1 1/2 cups half-and-half
1/4 teaspoon dried leaf thyme
1/8 teaspoon pepper
1 cup shredded sharp Cheddar cheese

PREPARATION:

Prepare crust for quiche or use a purchased 9-inch pastry shell. In a mixing bowl, mix together flour and salt. Cut in cold butter with a pastry blender until coarse crumbs form; add water, a little at a time, until dough holds together and forms a ball.

Shape into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.

On a lightly floured surface with a floured rolling pin, roll out dough into a circle about 11 inches in diameter. Fit dough into a 9-inch pie plate or quiche pan. Trim edges, leaving a little overhang, about 1/4-inch all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights. Bake quiche crust for 10 minutes at 375°.

Filling:
In a small bowl, whisk together the eggs, cream, thyme, and pepper. Pour into the baked crust. Crumble sausage over the top with the shredded Cheddar cheese. Bake at 375° for about 30 minutes, or until quiche filling is set and lightly browned. Serve quiche with fresh sliced tomatoes.

Breakfast quiche serves 8.

Cheesy Sausage Quiche

1 lb ground sausage
1 sliced onion
1/3 cup green peppers, chopped (optional)
1 1/2 cups shredded sharp cheddar cheese
1 tablespoon flour
2 beaten eggs
1 cup evaporated milk
1 tablespoon parsley
1/4 teaspoon black pepper
3/4 teaspoon seasoning salt
1/4 teaspoon garlic salt
1 unbaked pie shell



1. Brown sausage and drain then rinse with hot water to remove excess fat.

2. Place sliced onion in drippings from sausage and cook until onions are translucent.

3. Remove and blot in paper towel to remove excess fat.

4. Mix sausage and cheese with green pepper (optional) and add flour and mix until coated with flour.

5. Place in unbaked pie shell.

6. Place onions on top of quiche.

7. Mix spices with beaten egg and add evaporated milk, and stir.

8. Pour milk mixture evenly over the quiche.

9. Bake at 350 degrees for 35-40 minutes or until quiche is set.

10. Let set for 10 minutes before serving.

Use any recipe you like and exclude the mushrooms. I would brown the sausage first, place it in the crust, put the cheese over that and then pour the custard (egg mixture) over it and bake according to the directions.

Quiche is one of those recipes that can be changed and adapted to your tastes as long as the basics are there.
