How long and at what temperature do I cook an 8 pound roast beef for?!

The first thing I do is rinse the meat well under cold water.

There are several ways to answer this question. First, we need to determine the kind of roast it is--is it a tender cut of meat, or is it a cut that tends to be tough like chuck roast? The next question to answer is, how do you want it cooked? Rare or medium? First, to ensure it cooks tenderly, cover the pan tightly with aluminum foil--heavy duty if you have it.

Season the meat with garlic--fresh or powdered, a little salt & pepper if you like. You can even sprinkle a little basil or oregano on top. If you like, pour a little dry cooking (or regular drinking) wine in the bottom of the pan. It will add flavor and help tenderize the meat. You can put the roast in a plastic bag or container and marinate it in the wine & spices for however long you have before you have to put it in the oven, this will also add flavor and tenderize the meat further.

For rare, cook roast 15 minutes per pound, so an 8 pound roast would cook for two (2) hours at 350 degrees. For medium, cook roast for 20 minutes per pound at the same temperature, 350 degrees which would be two (2) hours and forty (40) minutes.

You can uncover it to brown it for the last 15 minutes, but you don't have to do this. You can also put cut up carrots, onions and potatoes around the roast. The meat and vegetables will flavor each other and it's a whole meal in one pan.

Set the oven on the "bake" setting. Put the pan in the center of the oven when baking.
