What can I do with leftover pork roast?!

Question: I like to make pork sandwiches with it and here is another idea.

Shredded Pork Tacos (using leftover pork roast)

These tasty tacos are a good reason to plan to have leftover pork roast. Serve with tortilla chips and guacamole for dipping.

3 cups shredded or finely chopped roast pork
1 cup chopped onion
1 garlic clove, crushed
1/2 jalapeno chile, minced *
12 flour tortillas, warmed
3 cups shredded lettuce
2 cups diced tomatoes
3/4 cup shredded Cheddar cheese
Salsa, as desired

In large nonstick skillet, saute onion in oil over medium heat for 5 minutes, until soft and translucent.

Stir in garlic and jalapeno; cook and stir for 1-2 minutes, until garlic is soft but not brown.

Add cooked pork; toss lightly. Heat through thoroughly.

In each tortilla, roll up 1/4 cup pork, some lettuce, tomatoes, 1 tablespoons cheese and top with salsa, if desired.

* Always wear rubber gloves when handling hot chiles.

Cut it up, add some honye barbecue sauce and a little ketchup and water, simmer and eat bbq sandwiches!

Great meal to make. Pull the pork apart into big chunks, Put in crockpot then add sourkraut. Let in crock for 1 1/2 hours. Then add hot dogs. Make mashed potatoes enjoy a great tasting meal.

I agree with the first answer since I was going to say make sandwiches.

Cut it up, and cut potatoes into small cubes and make a pork hash. Top it with a poached egg.

One of my favorite things is to cut it up, and heat in gravy with a can of chop suey veggies. Serve it over rice.
Good eats!!

Or chop it and brown the pieces in some oil & garlic, then add some boxed stir-fry mix.

Make sweet and sour pork, with rice.

shred it with a fork and make a gravy with the juices, or buy some canned gravy. On a slice of bread, put the pork, another piece of bread on top and cover with the gravy. put mashed potatoes on the plate also with some gravy and you have a yummy hot pork sandwich...you can also do this with tenderloin, roast beef, turkey..

Make a pork sandwhich?? Make pork stew??

Throw it out and go vegetarian :)
