Will this make my apple pie watery?!


Question: If we add all the ingredients (apple, sugar, spices), put into a pie crust, put in the fridge and sit for 3-4 hours, when we bake the pie, will it be watery, or ok?

Will anything else taste bad/different?

If you do, you run the risk of having the bottom curst being soggy and your apples being brown. Never run a risk during holiday cooking, it is stressful enough without any risk!

You have two options:

1. Cook now and reheat later (or serve cold). Pie doesn't have to be pipe'n hot when served. Though it does make it pare with ice cream much better! Or you could bake now, and reheat later. Just remember to cover it with a "tent" of foil so that the crust doesn't burn. The last five minutes of "reheating" you could uncover it to make sure it browns on the top. If it is having a hard time browning, you could brush a light coating of butter or egg whites on it.

2. Bake it later!
This is what I would do if I had the fridge space.
To save time, prepare your pie plate with the bottom crust in place. Place the top crust flat on another plate to keep its form. Cover both with plastic wrap and place safely in the fridge. Cut up your apples and add 2-3 tsp. of lemon juice to them, this keeps them from going brown. Mix your sugar, spices, and one tsp of flour in a mixing bowl. Then add your sliced apples. Put a tight lid/wrap on the bowl and place in the fridge. Now all you have to do is heat the oven, pour your apples into your pie plate, cover with top crust, and bake.

It will be o.k.

It shouldn't really do anything to it. Usually you toss the apples with cornstarch, cinnamon and sugar. The bottom crust may be a little wet, but I don't think you'll notice.

Sounds good--maybe I'll talk my husband into making one...

your crust will be soggy......and more than likely your apples will get brown...bake it now then if you need to re-heat it in the microwave for warm pie (by the slice)

I wouldn't put it in the crust til you bake it. I always add a tlbsp of flour to my apples, makes for a thicker, juicier pie.

did you forget the Corn Starch or the gelatin or tapioca

It might make the bottom crust soggy.

If it were me, I would chill the sliced apples in the fridge without adding the sugar and spices, and I would chill the pie crust separately (maybe you could prep the bottom crust, so it'll be really easy to assemble when you're ready). When you're ready to assemble, you could drain off the excess liquid, and then add the spices and prepare the pie for baking.
