Bring cold water to a boil in a pot, but once it boils, turn the heat down to medium (or med-low) so it's not bubbling anymore. Then break in the egg. The reason why you want to turn down the heat so the water is not bubbling is because when you put a raw egg into wild bubbling water, it tends to break the yoke.

Once the egg is in the water, don't stir it. Leave it be for a couple of minutes until the egg white has turned solid white. To gage how hard you want the yoke, if the yoke looks deep yellow orangeish, it's still runny. If it's light yellow and doesn't wiggle when you shake it on your spoon, it's well done. I cook mine somewhere in between so it's still moist in the center.

firehouse eggs are the BEST, my dad used to make them on mother's day and birthday's and stuff.
you take some really tastey thick sliced bread. make a hole in the middle of it with some type of cookie cutter (or cut one yourself. Make sure it's not too big...butter both sides of the bread. Heat a skillet till nice and hot. Add the bread and toast on once side, flip and crack an egg into the middle. Cook until the clear is white and the yolk starts to thicken.
Serve with fried tomatoes, asparagus and hollandaise sauce...soo so yummy!

Boil water in a shallow pan, add some white vinegar, it will help the egg to 'stay together', but don't add too much or the egg will taste like vinegar. Break the shell and gently dropp the egg in, boil for a couple of minutes.

bring the water to a simmer not a boil, add a little vinegar to help keep the whites of the egg together.
