If I mix mango with pineapple will the pineapple flavour overtake the mango?!

There is a new blend of juice on our supermarket shelves.. Orange juice with mango juice... the mango takes off the acidity of the orange juice... it really is useful for that...
Pinapple juice is particularly acidic.. so the mango juice will really help balance the flavours. I think you should attempt it...
Normally I would recommend that you also add Tequila... and dance around a little hat.

Just put a peice of both in your mouth and you will find out.
It depends what you are making. You might need it all to sweeten the saltiness or lighten the richness of fattier food with its acidity. If you don't like the dominant flavor of the pineapple over mango, you can add some sugar.
you could substitute vermouth, but that would take away from the gin flavouring

I used to make a mango-pineapple chutney to go on grilled fish and found as long as the mango was fresh and the pineapple was canned the taste was never over-powering. If, however, you used canned mango and fresh pineapple then for sure it would over-power. Whatever the fresh fruit is, is generally going to have the strongest flavor.
Also, make sure your mangos are nice and ripe, so they have their full-flavor.
For a neutral flavour, substitute jicama for the pineapple, it has that wonderful crunch, too!
This recipe sounds perfect as an accompaniment for a nice bowl of gazpacho. ;-)
Use twice as much mango and shuck the pineapples.
I know that Mango taste overcomes all other fruit tastes, it's so strong.
