Are there any other recipes for gazpacho besides tomato based?!

I know what you mean. Throwing tomatos can make gazpacho a little acidic ... and that's not the least bit good if you are a sufferer of indigestion.

Gazpacho with mango soothes the savage beast.. chill it with ice:

2 cups diced mangos
* 2 cups orange juice
* 2 tablespoons olive oil
* 1 cucumber, diced
* 1 red pepper, diced
* 1 onion, diced
* 2 garlic cloves, minced
* 1 jalapeno pepper, seeded and minced (optional)
* 3 tablespoons lime juice
* 2 tablespoons fresh parsley, basil or cilantro
* Salt and freshly ground black pepper

Try substituting marinated sun-dried peppers for the tomatoes. Mango is always an option, too. ;-)

I had watermelon gazpacho at a restaurant in Santa Barbara, CA, and it was very, very good. Here's a recipe, though it's probably not from the restaurant where I dined.

Vegetable stock. Add vegetable bullion [you can get herbed] for extra flavor.
