Rack of lamb?!
Answers: Ok I am making two racks of lamb tonight and I think 130 Med rare is too rare for my hubby what temp should it be for the second one?
Lamb is not too great 'well done'. Put one rack in the oven 15 minutes ahead of the other one & then both racks should please you. I'm doing this with ribs tonight. He likes his meat on the bone not falling off the bone the way I Iike it, so mine will be in the oven 1/2 hour before his.

You might cook it to between 140 and 150. Remember that you need to let the meat rest after cooking so that the internal juices re-distribute.

You could go to 135 and then make sure you let it rest for 10 to 15 minutes. It will continue to cook a bit while it is resting and won't have red juices running everywhere when you cut it. The longer it rests the better but not longer than 30 minutes.
