Does anyone have a nice easy recipe for lentil soup?!

This is a very simple and basic lentil soup.

All quantities are approx. as I don't tend to measure.

2 onions Finley chopped
2-3 Carrots diced
1/2 Small swede diced
2 medium potatoes diced
250g meat diced ( I use Smoked ham or bacon)
2 Knorr vegetable stock cubes (or any other vegetable stock cubes)
1 cup lentils
1 1/2 - 2 pt water
1 tbs butter
salt and pepper

1. Place the onions, carrots, potatoes and swede with the butter in a heavy based saucepan over a moderately low heat with the lid on to gently sweat of for 10 -15 minutes. Keep stirring every 3-5 Min's.
2. Add the lentils, stock cubes and water.
3. Bring to the boil and simmer for about 1/2 - 3/4 an hour.
4. Use a hand blender, mixer or masher to smooth completely or leave it slightly lumpy.
5. Add salt and peper to taste
6. If it is too thick add more water.

14 ounces lean smoked pre-cooked turkey sausage (Kielbasa), sliced
1 cup diced celery
1 medium onion, diced
1 carrot, diced
3 cups water
1 14.5-ounce can fat-free, reduced-sodium chicken broth
2 14.5-ounce cans no-salt added diced tomatoes
1 cup dried lentils
1/2 teaspoon salt (optional)
1 teaspoon ground black pepper
1 bay leaf

Use some shredded meat such as lamb or beef. Place in water or a vegetable broth and simmer. Add lentils and continue to cook until lentils are done. If you want, add salt and pepper to taste. This is the dish in the bible known as "pottage" served by Jacob to Esau in exchange for Esau's birthright.

Spicy Lentil Soup

* 3 tbsp olive oil
* 1 large onion, chopped
* 4 cloves garlic, sliced, lengthwise
* 1/2 tsp cumin seeds
* 1/2 cup green lentils
* 1/2 cup red lentils
* 1 small dried chili, crushed
* 2 carrot, diced
* 2 stalk celery, diced
* 2 bay leaf
* salt
* freshly cracked pepper
* 1 tbsp red white vinegar
* 6 cup stock, vegetable


Directions:
Spicy Lentil Soup

1. In a saucepan, sauté onions in olive oil on medium heat until golden.
2. Add the sliced garlic and cumin seed and continue to cook for a further 2 to 3 minutes or until garlic is golden.
3. Add remaining ingredients, except the vinegar, and bring to a boil. Cover and reduce heat to low. Simmer, covered, for 30 minutes.
4. Uncover and simmer for a further 10 to 15 minutes or until lentils are tender. Adjust seasoning and add the vinegar.

You could add some ham to it if you wanted as well...or bacon.

2 tablespoons olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
2 teaspoons kosher salt
1 pound lentils, picked and rinsed
1 cup peeled and chopped tomatoes
2 quarts chicken or vegetable broth
1/2 teaspoon freshly ground coriander
1/2 teaspoon freshly ground toasted cumin
1/2 teaspoon freshly ground grains of paradise


Place the olive oil into a large 6-quart Dutch oven and set over medium heat. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. Using a stick blender, puree to your preferred consistency. Serve immediately.

This is a lentil and potato soup but no meat. You just put about 2 cups of rinsed lentils into pot of enough water to completely cover the lentils plus. Bring lentils to the boil then add diced potatoes or what ever veges you like eg. carrots, sweet potato. While this is boiling dice some onion and fry in olive oil until the onion is golden brown. Add to the lentils and potato plus add salt and pepper to taste. Keeping simmering until ingredients are soft. It is ready to serve and is very tasty.
