1 med. clove garlic, minced 1/2 med. onion, chopped 1 (28 oz.) can concentrated crushed tomatoes 1 (6 oz.) can tomato paste 1 c. water 4 leaves fresh basil, chopped (or 2 tsp. dried basil) 1/4 tsp. (scant) freshly ground black pepper 3/4 tsp. salt (or to taste)

Heat the olive oil in a six-quart saucepan over medium heat. Brown the garlic. Add the onions and saute until they're transparent. Add crushed tomatoes, tomato paste blended with water, basil, pepper, and salt. Simmer for 30 minutes over low heat, stirring often.

SOME VARIATIONS:

For a marinara sauce, add one medium-size fresh tomato, peeled and seeded, cut in chunks and sauteed with the garlic and onion. Then add the rest of the ingredients along with half a teaspoon of oregano.
For a meat sauce, brown a pound of ground beef, pork, or veal, or a combination of those meats, and drain off the excess fat. Add the cooked sauce and simmer an extra two to three minutes. Add water, if necessary, to adjust consistency.

simmer the tomatoes first. Add sat and pepper to taste. The tomatoe paste next but it is used as a thickener. If you have a hand blender or a bar blender, us it to puree your sauce. Marinara sauce has a carrots and onions with some herbs cooked into it and is much healther.

Diced onion, garlic and a little chilli (if you have them)
Fry them until the onion is translucent.
Add the tomatoes and the tomato paste and stir in.
Add any italian style herbs you have like basil, oregano, sage, thyme, rosemary and salt and pepper.
Bring to the boil and then let it simmer and reduce while you cook your pasta.

Add black olives, capers, mushrooms, baby spinach leaves, capsicum, feta, anything you like... whatever you have.

I dont know what else you have but here's my favorite.. 1/2# ground beef, 1/2# ground pork, 1 large onion small dice and a few garlic cloves.. small can of tomato paste and 1 16 oz can of stewed, whole tomatoes ect. Heat up your pot and add some oil.. Imediatly add your meat and brown. add your onion and garlic and let cook for a few min and add one small can of paste. once all is incorperated add about 1 cup white wine and add fresh basil, mint and red pepper flakes and cook for 5 min. add your can tomatoes and let simmer while covered for 15 min.. use a lot of salt to adjust seasoning.

Yes, you can make tomato paste, just add water to thin out a bit.
