Buffalo Chicken Wing Soup

1 small onion, diced
2 stalks celery, diced
1/4 cup (4Tbs) butter or margarine
1/4 cup flour
3/4 cup milk (i used skim!)
2 cups chicken broth
2 cups cooked diced chicken (I used 3 breasts)
4oz Velveeta (low fat ok!)
1/4-1/2 cup Franks Red Hot or Franks Buffalo Wing Sauce (used combo of both)
1/4 cup sour cream
Blue Cheese Crumbles

Cook onion and celery in butter until tender, stir in flour. SLOWLY whisk in milk and chicken broth. Add chicken. Add Velveeta and stir until melted. Add hot sauce, sour cream, and sprinkle with blue cheese to your taste preference. Cook low, stirring constantly until heated through and blue cheese is melted. SERVE!

For my chicken breasts, I marinated them in Franks Red Hot sauce, and Lawry's Garlic Pepper overnight... Grill them the next day, and tore them up by hand to put in the soup.

You don't have to put the sour cream in. It taste good but it isalso is good without it. I have done it both ways (when I didn't feel like going to the store to get it).

It cooks so fast I wouldn't bother with the crock pot, just do it on the stove.

Chicken Wing Soup (Fast but still tastes close to homemade!)

2 servings 1? hours 10 min prep

4 microwave chicken wings (kind you find in the freezer case, I used cajun spiced ones, or more)
4 spring onions (aka green onions, green and white pieces)
1 big carrots
1/2 dried bay leaf
3 whole black peppercorns
3 whole allspice

Chop up carrot and spring onions in various ways, matchsticks, discs, slivers, etc.
Place in a medium saucepan with the black peppercorns, allspice and bayleaf.
Microwave the microwave chicken wings according to package instructions.
Add to saucepan.
Add water just to cover all ingredients in pot and place over low to medium heat and simmer for 30 minutes to an hour or until the carrots are tender.
Remove peppercorns, allspice and bayleaf.
Serve.
Notes: You can add other vegetables to this but it taste good and can be made while you're sick.
