Apple Oatmeal Crisp

Original recipe yield: 1 - 8 inch square pan

INGREDIENTS
1 cup brown sugar
1 cup rolled oats
1 cup all-purpose flour
1/2 cup butter, melted
3 cups apples - peeled, cored and chopped
1/2 cup white sugar
2 teaspoons ground cinnamon


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C.) Lightly grease an 8 inch square pan.
In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
Bake in the preheated oven for 40 to 45 minutes, or until golden brown.

FILLING:
4 cups sliced and peeled
Cortland apples
1/2 cup sugar
1/2 tsp cinnamon
or canned pie filling

TOPPING:
1 cup brown sugar
1 1/4 cups flour
1 cup rolled oats
1/2 tsp salt
1/2 cup butter
1/3 cup shortening
or all butter(might need a little less)

Place apples mixed with sugar and cinnamon in the bottom of a greased 10x6x1 1/2-inch baking pan.

Combine brown sugar and sifted flour, oats, and salt in a bowl. Cut in butter and shortening as for pastry and sprinkle over the apples.

Bake at 375 degrees for 40 minutes or until crisp and brown.

Cranberry-Apple Crisp with Oatmeal Streusel Topping

Ingredients

Topping:
1 cup (packed) golden brown sugar
1 cup old-fashioned oats
3/4 cup all purpose flour
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into pieces

Filling:
2 12-ounce packages cranberries
1 1/4 pounds Golden Delicious or Fuji apples (about 3 medium), peeled, cored, cut into 1/2-inch cubes
1 1/2 cups sugar
2 tablespoons apple juice or cider

(French Vanilla Ice Cream to serve with)

Preparation:
For topping:
Combine brown sugar, oats, flour, and salt in large bowl; toss to blend. Add butter and rub in with fingertips until mixture comes together in moist clumps. Cover; chill while preparing filling. (Topping can be prepared 1 day ahead; keep chilled.)
For filling:
Preheat oven to 375°F. Generously butter 13x9x2-inch glass baking dish. Combine cranberries, apples, sugar, and apple juice in heavy large pot. Bring to boil over medium heat, stirring often. Boil until cranberries are tender and juices thicken slightly, about 5 minutes. Transfer filling to prepared dish. Sprinkle topping over.

Bake crisp until filling bubbles thickly and topping is crisp and deep golden brown, about 40 minutes. Let cool 10 minutes. Serve with ice cream or whipped cream.

I love a good apple crisp and this one is good - serve with vanilla ice cream.

4 medium tart cooking apples, sliced (4 cups)
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/3 cup butter or margarine, softened
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
Cream or Ice cream, if desired


1. Heat oven to 375oF. Grease bottom and sides of 8-inch square pan with shortening.
2. Spread apples in pan. In medium bowl, stir remaining ingredients except cream until well mixed; sprinkle over apples.
3. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork.

1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
TOPPING
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup (1/2 stick) butter or margarine
1 cup chopped nuts
3/4 cup quick or old-fashioned oats


Directions:
PREHEAT oven to 375° F.

FOR APPLE LAYER:
ARRANGE apples in 13 x 9-inch baking pan. Combine morsels, sugar, flour and cinnamon in small bowl; sprinkle over apples.

BAKE for 20 minutes.

FOR TOPPING:
COMBINE flour and sugar in medium bowl. Cut in butter with pastry blender or two knives until crumbly. Stir in nuts and oats; sprinkle over apple layer.

BAKE for an additional 30 to 40 minutes or until apples are tender and topping is lightly browned. Cool slightly. Serve warm with ice cream, if desired.

Grandma Cole's Apple Crisp

Makes: 1 pan
Prep Time: 30 minutes
Cook Time: 40 minutes

Ingredients
12 large Macintosh apples
1 tbsp tapioca pudding mix
1/2 cup sugar
cinnamon to taste
1 1/2 cup quick oatmeal
1 1/2 cup brown sugar
1 cup flour
1 1/4 cup butter

1 pint Cinnamon Ice Cream

Directions

Preheat oven to 350 degrees

Peel and dice apples into cubes

In a 9x13 inch dish place the diced apples in the bottom and sprinkle with tapioca, sugar and cinnamon to taste.

In a bowl, combine the oatmeal, sugar, brown sugar, flour and 3/4 cup of butter until the mixture is well blended.

Pour over the apples packing in the mixture to avoid holes.

Slice the remaining 1/2 cup of butter (1 stick) into about 16 pieces and place evenly over the top of the mixture.

Cook for 40 minutes in the preheated oven.

Serve warm with cinnamon or vanilla ice cream.
