How do I make fish soup with a fish-head?!


Question: boil the entire head.........add whatever seasoning your recipie calls for, then dig the stuff out of the head. I think you're supposed to use every part!

I have a recipie from Paula Dean that calls for boiling a fish head, which I thought was gross to dig the stuff out of, so I didn't do it.........(I ate it at her restuarant and it was so yummy but I didn't have a clue they had used fish heads)
Someone told me to use shrimp shells to boil for a similar flavor and then strain thru cheesecloth.

BERMUDA FISH CHOWDER

3 lg. fish heads
6 qts. water
3 cans Campbell's vegetable soup
1 1/2 lbs. bacon
1 1/2 lbs. onions, chopped fine
2 c. white flour
1 c. black rum or sherry
4 tbsp. Worcestershire
1/4 c. Gravy Master
Bay leaves
Salt, pepper to taste

Put fish heads in large pot with bay leaves and water. Bring to boil and then slow simmer for 4 hours. Cool completely before straining stock and removing bones. Add fish to stock, simmer until fish floats to surface - extract about half the fish. Fry bacon until crisp. Cool before crumbling - set aside. Fry onions in bacon fat. Set aside.
Put flour in frying pan - stir to light brown. Remove from heat and cool. Puree soup - add to stock. Mix flour and water - slowly add to stock until mixture is medium thickness. Add onions and bacon, Gravy Master and Worcestershire and rum. Season to taste. Simmer for several minutes before serving.

and whatever vegetables
you want in it.
put it in a cake pan.
then put it in the oven.
on 450 for 50 minutes

i made it. and my kids loved it.

i really dont know about you, but i would put the fish head in water and heat it.

try to get a whle fish. if you can't, then season fish head, heat a little oil then sautee fish with onions and a little sugar. once juice is made from fish then add veggies. cook then add a little water. good luck.

You put the fish-head into the water with vegetables and spices to make the soup base. After it has cooked for a few hours, you filter out all of the solids and use the broth as a base.

First you must collect more than just one fish head and make fish stock. A stock is a flavored liquid obtained by (in this case) sweating and boiling the fish bones with mirepoix and other herbs for about 45 minutes. Then proceed with your soup recipe.

Boil a fish head for broth, throw in some water chestnuts, and DO NOT invite me! Other than that, google it, there's got to be something out there to satisfy your tastes!

for a couple of hours simmer /boil a fish head with an onion ( chop up the onion first) then strip the meat from the fish head and put it in the soup. Its really quite good.

Well, you must use the head of a large fish. Chop it up into more manageable pieces. Wash the fish head with water until there is no more blood. Drip the chopped fish head and set it aside.

Then, boil a pot of water and put in the following: chopped fresh tomatoes, sliced ginger, stalk of lemongrass, salt and pepper to taste. When the water starts to boil again, put in the chopped fish heads and boil for about another 10 minutes and then put in freshly sliced onion leeks.

Serve hot and enjoy!

I would say to not be so hard on yourself. I believe that you are smart enough to figure it out and don't need to call yourself names....just kidding. :)

cooked by sauteing onions...garlic,tomato and some miso paste add water den put tamarind soup base powder it should be sour,good source of vit.c..add some vegies like string beans, season to taste with salt and pepper.
