Breakfast Ideas?!?!


Question: The last party I went to we had belgin waffles, they were as delicious as you can imagine! I'm throwing the part and need some ideas. I need fast and easy breakfast choices, thank you for your help!

Belgian Waffles

2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons confectioners' sugar
1 tablespoon vegetable oil
2 cups milk
3 eggs, separated
2 teaspoons vanilla
1 pinch salt
whipped cream

Combine the flour, baking powder, confectioners sugar, oil, milk and egg yolks.
Beat the egg whites and salt until they stand in soft peaks, mix in the vanilla at this time and fold into the batter (do not over mix).
Pour 1/8 of the mixture into a hot waffle iron and bake for about 2 minutes.
Repeat with the remaining batter.
Top with your favorite fruit and whipped cream and serve hot.

Peanut Butter / Tortilla
Spread a tablespoon of natural peanut butter on a whole-wheat tortilla. Add a banana and roll up. You’ve got a healthy breakfast that’s easy to eat on the go.

Drink it
Have a breakfast smoothie or shake. You can add skim milk to a packet of instant breakfast and toss it in a blender with some frozen fruit and/or yogurt. If you’re pressed for time, you can throw it in a travel mug and drink it on the way to work. Just make sure you’ve erased your milk mustache before you get to your desk.

Oatmeal
If you want to stick with a classic, oatmeal is still a tasty and heart-healthy favorite. If you have the time, prepare cooked oats at home (you can also prepare a large quantity over the weekend to have on hand during the week). Some folks keep packets of instant oatmeal in their desks at work. All you need is water and a microwave to prepare. Get a little creative with your oatmeal – add dried or fresh fruit, nuts or wheat germ to add a little texture and flavor.

Cereal
For a really traditional idea, cereal is always an option but choose a healthy, whole grain cereal. Cocoa puffed rice is definitely tasty but it’s not going to keep you full for very long. Look for cereals with less than 12 grams of sugar per serving.

Toast
Don’t forget the old stand-by – toast! Use whole grain breads and bagels and top with natural peanut butter or reduced fat cream cheese.

Eggs
Unless you have cholesterol issues, eggs have been dubbed healthy again. It takes approximately 5 minutes to scramble up a few eggs. You can add veggies, cheese, and salsa for a little southwestern flair. To make portability easier, you can stuff a pita or a tortilla with your egg scramble.

Dairy Products
Yogurt is another easy breakfast. You can make it a little more interesting by adding some trail mix or shredded coconut. Or try cottage cheese mixed with fruit.

Leftovers
Think outside the box – leftovers can make wonderful breakfasts, if you can stand the smell of microwaved pizza at 7 am. Beans are also another option that will keep you full until lunchtime.

Healthy Snacks
In a pinch, you can eat granola bars, trail mix, or meal-replacement bars. It’s certainly better than eating nothing for breakfast!

Breakfast Casserole is always a good choice. Take some raw crescent rolls and spread them in the bottom of a pan. Then place crumbled breakfast sausage on top of that. Sprinkle hashbrowns and cheese on top of the sausage. Pour in a few scrambled eggs and bake at 375 for about half an hour.

breakfast burritos with scrambled eggs, chopped sausage, cheese and salsa on the side all wrapped up in a tortilla with some hash browns- YUM!!!

Stuffed french toast always goes over well at our big overnighters:

Cut french bread into 2 inch thick slices, then cut a pocket in each.
Stuff with any of the following...browned & crumbled sausage, cooked bacon, sausage patties, ham, swiss cheese (or american, cheddar, monterey jack, pepper jack, or whatever!).
Our favorite is ham & swiss.
Dip each filled "sandwich" into beaten egg, and fry as you would french toast, until brown on both sides & cheese is melted.
These are especially fun if you have a variety of "fixin's", and either make them per request, or have guests make their own (with your help).

The other day I made peanut butter stuffed french toast. It was simple and really good. Instead of syrup I heated up raspberry jam in the microwave til it was melted and poured it over the toast, yum!
Take white bread, remove the crusts. Spread one side with peanut butter (crunchy or creamy is good, I had both) and put the other slice on top. You can make these in advance, especially if you need alot. Now mix eggs, milk and a little vanilla in a bowl. dip the sandwiches in the egg and milk and fry in a frying pan with non stick spray. Cook until golden, flip and repeat. After you put on plate you can sprinkle with powdered sugar.
You can also serve with fruit flavored syrup instead of Jam or plain old maple. Its really delish.

How about Potato fritatta? Its' about 3" thick and has all the yummy breakfast ingredients. Based on serving of 12,

2 # shredded potatoes w/ skin on, add 2 med sweet onions finely diced, add 2 cups flour, add beaten 12 eggs w/ 2 cups of light cream, add 2 .cups diced ham( whatever your favorite is) , add 1 cup of shredded cheddar, add 1 cup shredded mozz. , add 1 tbl baking powder.Mix all together and put in 9x13" Pyrex pan that sprayed beforehand w/ Pam. Preheat oven to 375F and bake for 1 1/2 hrs. with foil on top and remove it for last 1/2 hr. The Frittta should not be loose in middle and slightly browned on top. Let cool for 15 minutes and cut down middle horizontally and cut in 1/2 vertically and then 2 more cuts on each side of vertical mid line for 12 equal portions.
Serve with ketchup and or chive sour cream.
