Here are a few that my family likes & they are easy. Hope this helps!


Chicken Cordon Bleu Casserole---serves 8

INGREDIENTS
2 egg
1 cup milk
4 pounds skinless, boneless chicken breast halves - cut into chunks
2 cups plain dried bread crumbs
2 cups oil for frying
1 pound Swiss cheese, cubed
1 pound cubed ham
2 (10.75 ounce) cans condensed cream of chicken soup
2 cups milk


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Beat egg and 1/2 cup milk together until combined. Stir in the chicken chunks to coat, then drain, and coat with bread crumbs. Heat oil in a large skillet to 375 degrees F (190 degrees C). Fry breaded chicken cubes in hot oil until golden brown on all sides, then remove, and drain on paper towels.
Place chicken cubes in a glass baking dish, along with the Swiss cheese, and ham. Stir together the soup with 1 cup milk, pour over casserole.
Bake in preheated oven until golden brown and bubbly, about 30 minutes.



Chicken & Barley Casserole--serves 8

INGREDIENTS
8 slices bacon, fat removed and meat finely chopped
2 onion, thinly sliced
4 carrots, diced
24 button mushrooms, quartered
5 cups chicken stock
2 cups barley
2 teaspoons dried thyme
2 teaspoons dried marjoram
2 teaspoons dried parsley
2 bay leaf, crushed
ground black pepper to taste
2 green bell pepper, chopped
8 dark meat chicken pieces


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a large skillet, fry bacon until browned. Reserve bacon fat for sauteeing chicken later. Add onions and carrots to skillet and saute 2 minutes. Add mushrooms, stock, barley, thyme, marjoram, parsley, bay leaf and pepper to taste. Mix all together and spread mixture in a 9x13 inch baking dish. Add green bell pepper on top and stir to settle.
Heat reserved bacon fat in skillet and brown chicken. Place browned chicken on top of barley mixture, cover baking dish and bake in the preheated oven for 1 hour and 10 minutes.



BBQ Chicken Casserole---serves 8 Very Good!!

INGREDIENTS
2 cups all-purpose flour
2 broiler/fryer chicken (3 to 4 pounds), cut up
1/4 cup vegetable oil
2 cups chopped onion
2 cups chopped green pepper
2 cups thinly sliced celery
2 cups ketchup
1 cup water
1/4 cup and 2 tablespoons brown sugar
1/4 cup and 2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
2 (16 ounce) packages frozen corn, thawed



DIRECTIONS
Place flour in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, brown the chicken in oil; transfer to an ungreased 13-in. x 9-in. x 2-in. baking dish.
Drain skillet, reserving 2 tablespoons drippings. In the drippings, saute onion, green pepper and celery until tender. In a bowl, combine the ketchup, water, brown sugar, Worcestershire sauce, salt and pepper; add to vegetables. Bring to a boil. Pour over the chicken.
Cover and bake at 350 degrees F for 30 minutes. Sprinkle with corn. Bake 18-20 minutes longer or until chicken juices run clear and corn is tender.




Chicken Casserole

INGREDIENTS
1 (6 ounce) package wild rice, cooked
1 (10 ounce) package chopped frozen broccoli, thawed
1 1/2 cups cubed cooked chicken
1 cup cubed cooked ham
1 cup shredded Cheddar cheese
1 (4 ounce) can sliced mushrooms, drained
1 cup mayonnaise
1 teaspoon prepared mustard
1/2 teaspoon curry powder
1 (10.75 ounce) can cream of mushroom soup, undiluted
1/4 cup grated Parmesan cheese


DIRECTIONS
In a greased 2-qt. casserole, layer first six ingredients in order listed. Combine mayonnaise, mustard, curry and soup. Spread over casserole. Sprinkle with Parmesan cheese. Bake at 350 degrees F for 45-60 minutes or until top is light golden brown.

homemade pizza! I love it, it's really pretty easy to make & you can really make it good with lots of variation. I make homemade crust (you can find a recipe at epicurious.com), put on jarred pizza sauce, & I usually add mushrooms, sauteed sausage, and lots of garlic, then a layer of cheese, salt, pepper & red pepper flakes, then a light later of freshly grated parmesan cheese. Then, bake it at 450-500 degrees for a about 15 minutes. VERY good.

HUNGARIAN GOULASH

2-1/2 lb. beef, cut into chunks
1/2 garlic clove, crushed
1/2 c. onions, chopped
2 Tbsp. butter
2 C. water
1 C. catsup
1/2 tsp. dry mustard
1 Tbsp. paprika
2 Tbsp. brown sugar
1 Tbsp. salt
1 tsp. Worcestershire sauce
1 tsp. vinegar
1 tbsp. flour
8 oz. noodles

In a large pan, brown beef with onion and garlic in large skillet with butter. Add water, catsup, and seasonings, cover and cook at low heat until the meat is tender, about 2 hours. Mix flour with 1/4 c. of water and add to hot mixture, stirring constantly, and cook until thick. In the meantime cook noodles in boiling salted water. Drain, mix with part of the sauce from the meat, and serve with the meat over them.

CARIBBEAN STYLE CHICKEN

6 split chicken breasts
Garlic powder
3 tbsp. paprika
1 tbsp. pepper
2 tsp. salt
2 tbsp. soy salt
2 tbsp. hot sauce
2 c. vegetable oil

On platter, squeeze lemon over split chicken breasts. Rub garlic powder in breast, then sprinkle with paprika, pepper, salt, soy sauce and hot sauce. On a large platter, mix chicken in sauce until well coated. Put flour in paper bag and shake one piece of chicken at a time. Fry in 2 cups vegetable oil until chicken is done.

Pork Chops and Apples

2 medium unpeeled apples, sliced
4 tbsp. packed brown sugar
1/2 tsp. ground cinnamon
4 pork rib chops, 1/2 to 3/4 inch thick

Heat oven to 350 F. Place apples in a casserole dish. Sprinkle with brown sugar and cinnamon. Trim fat from pork. Spray a skillet with cooking spray; heat over medium heat 1-2 minutes. Cook pork in hot skillet about 5 minutes, turning once, until light brown. Place pork in single layer on apples. Cover and bake about 45 minutes or until pork is slightly pink when cut near the bone and apples are tender. Serves 4.

Here are a few ideas that come personally from myself. They're helpful and also good for people who are on a budget.

Ground Beef & Bow Ties

You will need ground beef, bow tie noodles (you can use elbow macaroni if you'd like) and should know the amount of noodles and beef needed for the amount of people you're serving.
First, cook the ground beef while the noodles are cooking in boiling water.
Season the ground beef while it's cooking with garlic salt and onion powder.
When the noodles are completely done, drain all of the water out and leave in the drainer until the ground beef is ready.
While ground beef continues cooking, start preparing your sauce. I used Prego sauce with herbs. I cook it in a pot on medium heat, stirring every 5-8 minutes.
Once your ground beef is done and the sauce is heated, use a large pot to put the ground beef, the noodles, and sauce in. Then mix with a large cooking spoon.
Add shredded pieces of Mozarella Cheese on top and serve.

Ground Beef & Gravy

Simmilar to the ground beef with the bow ties, I actually prefer to use alfredo pasta for this one. I boil the alfredo pasta while cooking the ground beef and slowly heating the gravy (I use Hunts beef gravy).
When everything is done cooking, I put the ground beef, alfredo pasta, and gravy into a large pot and mix them all together. I add parmesian cheese (Kraft brand) and then serve.

Arroz Amarillo Con Gandules

This is a hispanic dish (I am puerto-rican). It's translation is Yellow Rice with Pigeon Peas.






What you will have to do is add about 2 cups (depends on how much rice you're planning to use.) of water to a medium or large size cooking pot. Then, you add a can of Salsa De Tomate by Goya (translation is Sauce of Tomato). You then add about 2 teaspoons of Sofrito by Goya and a Tbsp. of margarine. Allow this mixture to boil. When it reaches a boil, put the amount of white rice you're planning to use into the pot. Then, cover with aluminum foil. Check the rice every 7-10 minutes.
The first time you check the rice you will then add the can of Gandules by Goya into the rice (including the juice that the beans come in). After dumping the Gandules into the pot, fill the empty Gandules can up halfway with water and pour into your rice.
You will now add a pack and a half of Sazon (a seasoning by Goya) and a few dashes of Adobe Seasoning as well.
Continue to cover the rice and check every 7-10 minutes. Upon checking the rice each time, add a dash or two of the Adobe seasoning while stirring the rice to make sure all of it is getting cooked.
In about 45 minutes your rice will be ready. You will notice that the Gandules have become a brown color and the rice is now a yellowish/reddish color. All of the water will have become absorbed by the rice so there's no need for draining. You can serve this as a meal in it's own or serve as a side with chicken, pork etc.
If you're going to serve on the side with pork chops, here's how I would suggest to cook the pork chops.
Put about dollar coin size bit of oil into a pan. Then, take the chops out of the bag, and use a large plate for seasoning. Use garlic salt and packets of Sazon to season the Chops. Then, place them in the pan with the heating oil on about a medium heat. Keep a watchful eye and cook until browned on each side. They taste absoloutely delicious with spanish rice.

Stroganoff Surprise

I use the Knorr Pasta Sides in Stroganoff Flavor (These are VERY inexpensive. They're a dollar a piece) and corn to make this.
It's easy because the Pasta has the directions on the back and it cooks in 8 minutes. All you have to do is put 2 cups of water, ? cup milk, and 1 tbsp of margarine (which is optional) to a pot, let boil, once it boils you add the pasta mixture and let cook for 8 minutes, only stirring about every 3? minutes to make sure it doesn't stick to the bottom of the pot.
Then, let sit so that the pasta has time to thicken.
Meanwhile, I crack open a can of corn, drain out the juice, and add to the Pasta.
It's very delicious and goes well with Pork.

London Broil & More

I love London Broil. It's a great meat to season. I like to add Garlic Salt, Onion Powder, a dash or two of Old Bay seasoning, and some Emeril Chipotle seasoning.
I then cook on a medium heat in a sauce pan until they're well done.
While they're cooking I am preparing fresh Yams. Not the ones that are already in the can; I add a tiny bit of vegetable oil to a sauce pan, I cut the yams in 4 and let them cook in the sauce pan on medium heat. I don't add any seasoning, just a bit of butter.
The vegetable of choice? Canned asparagus. I just microwave it and it taste great with the cooked Yams and London Broil.

Breakfast at Night

I buy some of the Sausage Patties (you can buy them for 99cents a pack-Banquet) and cook them in a sauce pan with a bit of oil. While they're cooking, I take a few eggs, scramble them and put them into a sauce pan with butter. While the eggs are cooking, I take a slice of cheese and add it on top, mixing the egss with the cheese.
I take hamburger rolls, open the up, add some ketchup and when the eggs and sausage patties are all cooked I put sausage, eggs and cheese on each roll and serve. It's delicious.

Chicken With A Twist

We usually have leftover chicken from like Roasted Chicken that we may have eaten a few days before.
So, I take all the white meat thats left and cut it in small chunks. I season it with Sazon and Adobe seasoning and cook it in a saucepan with a tiny bit of oil and a slab of margarine.
While the Chicken is cooking, I take a box of Vitarroz Yellow Rice (it's 99 cents a piece). The instructions are on the box but basically you have 2 cups water, 1tbsp margarine, and let boil. Once it's boiling, you add the rice.
I cut up pieces of green pepper and add to the rice while it's cooking. When it's done, I add a few olives for even more flavor.
Then, once the chicken is done, I add all the chopped up pieces of chicken to the prepared rice and serve.
It's delicious.
