Bread making...KitchenAid v. Hand kneading?!
Answers: I always knead my bread dough by hand, but I would like to try and use my KitchenAid mixer. However, I could use some pointers. How do the kneading times differ? For example, I may knead my yeast rolls for about 8 minutes by hand. How long with the dough hook? Speed 2?
I let the mixer do the whole thing with the dough hook. Heck, I paid good $$ for that mixer; it's earning its keep! I knead by mixer for about 1/2 the time the recipe says, judging by how the dough looks. I use low to medium speed.
I always let the mixer take it to the stretchy stage. After the stickiness goes away and the gluten is active, I knead it until it is smooth. I usually try and do both with all batches of bread.
I would say half the time, but go on how it feels and looks not on how much time.
omg.i use kitchen aid whenever im baking..yeah its a llot faster than hand kneading if ur going to us kitchenaid with the dough hook it will tke about 4 minutes on speed 2 or 1 and when its done its relli stretchy and looks wonderful
Mixer because hand kneading it takes time and hard work on the gluten. But slow hand kneading makes good bread it works the gluten. First use the whipper for few minutes then use the hook. If you dont trust the dough, take a small piece and work it like a pizza and screen it though a window. If its transluent your good to go, if its back to hook.

with 10 thousand years of bread making before me
MY hands work well and it is cheep..
