Does anyone have a recipe for lemon rice?!


Question: Lemon Rice
1/3 c. butter or margarine
1 c. celery, sliced
1 sm. onion, chopped
1 - 2 c. fresh mushrooms, sliced (optional)
1/4 tsp. thyme
1 1/2 tsp. salt
1/8 tsp. pepper
2 tsp. grated lemon peel
1/4 c. lemon juice
1 1/3 c. water
1 3/4 c. precooked rice

Heat butter or margarine in frying pan. Add celery, onion, and mushrooms, if you wish. Saute for 5 minutes. Add thyme, salt, pepper, lemon peel, lemon juice and water. Bring to a boil. Add rice and cover. Remove from heat and let stand 5 minutes. Toss and serve.

Ingredients :

Basmati Rice 1 cup
Water 2 cups
Oil 1 Tbsp.
Mustard seeds 1 tsp(optional)
Green chillies 4 nos.
Ginger 1' inch piece finely chopped
Tumeric 1 tsp
Salt To taste
Lemon juice 1/4 cup
Peanuts 1/2 cup
Coriander seeds 1 tsp
Seasame seeds 1 tsp

Method:
Wash rice. Cook & allow it to cool.

Dry roast the coriander,seasame seeds & powder.
Heat oil in a pan.Fry seeds,ginger,chillies,peanuts
& tumeric.

Add salt .Off the stove & add the lemon juice.
Add rice & finally mix in coriander/seasame powder.

Serve with Chips or any Pappad of your choice.

Lemon Dill Rice

INGREDIENTS
3 tablespoons butter
1 large onion, minced
2 cups long-grain white rice
4 cups water
1/4 cup fresh lemon juice
2 tablespoons salt
3 tablespoons dill seed
1/2 teaspoon grated lemon zest
1 teaspoon chopped fresh parsley for garnish


DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
Melt butter in a heavy skillet over medium heat. Add the onion and rice; cook and stir until lightly toasted. Stir in the water and lemon juice, and season with salt and dill seed. Bring to a boil. Pour the rice mixture into a 3 quart casserole dish.
Bake for 1 hour, covered, in the preheated oven. Garnish with lemon zest and chopped parsley.



Lemon Thyme Rice

INGREDIENTS
1 tablespoon butter
1 cup uncooked white rice
1 (14.5 ounce) can chicken broth
2 tablespoon fresh lemon juice
1 tablespoon dried thyme



DIRECTIONS
Melt butter in a medium saucepan over medium-high heat, and stir in the rice. Cook rice, stirring frequently, until browned, about 5 minutes.
Mix chicken broth, lemon juice and thyme into the rice. Cover, and reduce heat to low. Cook 20 minutes, until liquid has been absorbed. Fluff with a fork before serving.
