Anyone have a good Zucchini slice recipe?!


Question: You need:
Up to 425 grams Zucchini (unpeeled, coarsley grated)
1 large finely chopped onion
2 or 3 finely chopped rashers of bacon
1 cup grated cheddar cheese
1 cup self-raising flour
1/2 cup oil
5 eggs
salt and pepper

Method:
Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs. Season with Salt and pepper. Pour into a well-greased lamington tin (about 16x26 cm). Bake in a moderate oven for 30-40 minutes ro until browned. Note: in a fan forced oven reduce cooking time to about 25 minutes.

Serving Suggestion: Serve hot or cold with salad.

I like to cook mine with a couple of cloves of garlic and some salt &pepper in some olive oil in a covered skillet on medium heat for about 20 minutes.

thinly slice zuke lenghtwise in 1/4" strips. brush w/ OO and S&P. Broil till soft and starting to brown. Let cool.
Add dolup of olive tapenade and slice of provolone and roll up end to end and run toothpick through to hold together. Bake in 350 until cheese has melted. Makes a great app or veg for plate for dinner.
Olive Tapenade: 2 cups, in food processor add;
4 oz. fresh basil, 4 oz. oo, 5 cloves of fresh garlic, 4 anchovy fillets, 8 oz of ptd. kalamata olives, 2 oz. grated parm., s & p to taste.
