4 small chicken breasts, sliced into strips
1 tablespoon Cajun spice
2 teaspoons olive oil
4 large flour tortillas
1/2 cup tzatikki dip
1 medium zuccini, grated
1 large carrot, grated
Method:
1. Place chicken strips, Cajun spice and oil in a bowl, cover and set aside for 10 minutes.
2. Heat a large non-stick fry pan over a medium-high heat.
3. Place the chicken strips in the pan and cook, stirring occasionally for 5 minutes or until brown and cooked through. Transfer to a bowl and keep warm.
4. Top each tortilla with Tzatziki dip, carrot, zuccini and grated carrot.
5. Serve immediately, or wrap for later use with a green salad of your choice.
Or a sandwich with a salad can be an easier alternative.
Salads are really good also.

If you have the time to do it on the weekend, prepare any stir fry vegetables you enjoy and some rice. Dish this up in portions and you will feel full and satisfied. You don't need to do your own vegetables either. I buy frozen ones that have a sauce pouch in the bag so it is easy as heating it all in a pan. You can add protein if you wish, but you should could the chicken, beef etc before you do the vegetables. Rice is easy enough to cook in the microwave oven. Pour in a cup of rice and enough water to cover plus about a half inch over the top. Microwave it on high for 10 minutes then fluff with a fork and allow to stand. Refluff with a fork and you have it. Put a layer of rice into your container, put the vegetables on top. Seal and freeze. You can zap that in a microwave anytime you want for a lovely hot meal. Just pack a fork and a napkin and you are done.
Salads, fruit salad and fruit is great if you have a taste for sweet things. Cut it all up at home and store in a sealed container in the fridge. Portion it out into individual serves as needed. You may like a yoghurt to go with that.
Hope this helps you. I don't know where you live, but I would say it depends on your climate what you may enjoy.
If you like muffins, there are various muffin recipes that are good for you to make. Also a task for the weekend and just store and serve as required. Soup is another if you have a thermos flask.
Enjoy your lunch. Bon appetit!
