An excellent New Years Recipe I picked up along the way is something called "Hoppin-John" AKA Peas, Rice, and Tomatoes. Goes something like this: Soak a pound or two of Black Eye Peas overnight , and rinse them very well in the morning. Set them to cook in plenty of water, (6-8 quarts for 2 pounds of Peas) and salt them generously. 1 or 2 Tbls. When thoroughly cooked, you can tell this if they smush on the side of the pot, drain them and set them aside. Rice: You'll need at least as much Rice as Peas, I would go with three or four cups uncooked Rice and 6-8 cups of either Chicken stock, or Bullion cubes and water, (one cube for each cup of Rice), when the rice is done , cover and set aside. Peas again: place Peas in a large pot and then add 2-4 12-16 oz cans of Stewed Tomatoes. DO NOT DRAIN THE TOMATOES, you need the juice for flavor. Cook over medium heat until heated through, about 5 or 6 minutes, then add the Rice. Continue to cook, stirring frequently, at this point you can add bacon bits, or whatever other flavoring you want, and season it to taste, keep cooking until the mixture just starts to thicken. As soon as it starts to do this, shut down the heat and leave it set for about 10 minutes, and then serve in a large bowl, and get out of the way.

well i'm having dinner just me and my hubby after I get home from work (at 11pm) so I'm going to par-cook some things before I go, and have him finish it off before I get there! :) here is the menu:
a salad
pan seered rib-eye steaks with a garlic rub
asparagus bundles (wrapped in italian ham)
fingerling potatoes roasted in duck fat
pumpkin pie

Some things that I really hope to make are hot spinach dip, some miniature quiche (made in mini muffin pans), mushroom turnovers, pizza fondue with crackers and veggies, and maybe some miniature cinnamon rolls. I just got a new cookbook for Christmas and I can't wait to try some of the recipes in it! Of course, I really want to make cupcakes and shape them into a '2008' and then frost them as if it were a cake. I really love foods that go along with the theme of the holiday, so I always try to throw in a few of those. Another favorite dip of ours is something called 'puke dip', it is SO good! Cover a plate with 8 oz of softened cream cheese, top with a 15 oz can of chili (with or without beans; turkey chili also works well), and then 1-2 cups shredded cheese of choice (cheddar, mexican blend, or montery jack are my favorites). Microwave for 1-2 minutes or until cheese is completely melted on top and everything is warmed through. Serve this with tortilla chips!

You can't beat New Years Cookies

We are having a duck pate, cranberry cinnamon coated goat cheese, and champagne. I haven't decided if we'll have light crackers or a crusty bread with these yummy things.

It's just me and my husband. We love "doing" New Year's with these sorts of things and relaxing at home. Maybe we'll get a nice caviar next year.

We're having a ton of people so here's what I am making..

Pasta Salad

I use pasta and boil it until it softens then I put it in a large bowl, add a a can of stewed tomatoes, a bottle of Zesty Italian Dressing, Chopped Scallions, Chopped Green Pepper, and Salad Seasoning. It's my grandmothers recipe.

I also am making a party tray with Wheat Thins, Saltines, & Regular Toll House Crackers w/ slices of cheddar and American Cheese, Pepperoni, Hard Salami, and Olives.

We're also serving Tortilla Chips w/ Spinach & Artichoke Dip, Hush Puppies, Mini-Bacon Cheese Burgers (they're bite size and delicious), and Ceasar Salad.

And as for meals our guests are welcome to have meatball sandwhiches (100% made by me meatballs, I use chopped onions, ground beef, and a tiny bit of bread crumbs, roll them up, cook them in sauce pan, and serve in Prego Spaghetti Sauce) choices of 3 rolls or they can have our Chicken A La King, which is Chicken, Cheese, & Broccoli with Stuffing on top of it, baked that way..and is very delicious
