Where is the tough muscle in the Scallop...?!

If there is a small notch running along the side, it has been removed. Otherwise, feel among the sides for a thin tough strip - it's what hinges the shell onto the scallop. If you cook the scallops with this connective tissue on, it will be very rubbery and chewy.

Its what attatches to the shell, if you have them shelled they should be gone, it will be a tough muscle look opposed to the white of the scallop

If you bought them precleaned do not worry it has been removed.....
