Chickpea and veggie curry
1 tbsp oil
1 onion, thinly sliced
2-3 cloves garlic, finely chopped
1 tbsp grated fresh ginger
1 tbsp sweet chili sauce
1 tsp ground turmeric
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp garam masala
1 red capsicum, thickly sliced
2 zucchini, cut into thick strips
1 carrot, cut into thick strips
1 celery stick, cut into thick strips
100g (3.5 oz) button mushrooms, halved
150g (5 oz) broccoli, cut into small florets
300g (10 oz) can chickpeas, drained
400ml (13 fl oz) can coconut milk
1/2 cup (25g / 3/4 oz) chopped fresh coriander
Method :
Heat the oil in a large pan, and cook the onion and garlic for 2-3 minutes, or until soft, but not browned. Add the ginger, chili sauce and spices. Stir for 1-2 minutes. Add the vegetables all at once and stir to coat. Stir in the chickpeas and coconut milk, and bring to the boil. Reduce the heat and simmer, covered, for 15-20 minutes, or until the vegetables are just tender. Stir in the coriander and serve with steamed rice.

Spicy Baked Eggplant Recipe
INGREDIENTS:
2 eggplants
1 tsp salt
3 tbsp olive oil
1/2 tsp hot sauce
2 cloves garlic, minced
1 tbsp balsamic vinegar
1/2 tsp rosemary
1 tbsp fresh parsely, chopped
salt and pepper to taste
PREPARATION:
Slice ggplants in half. Sprinkle salt over each half and let sit for at least 20 minutes, then rinse and gently pat dry.
Pre-heat oven to 350 degrees.
In a small bowl, whisk together 2 tablespoons of the oil and the hot sauce, and spread this over the eggplants.
Bake for 8-10 minutes, then turn eggplants, and bake another 5-7 minutes. Broil for an additional one minute per side. Eggplants should be browned and tender.
In a small bowl, whisk together the remaining one tablespoon of oil with the remaining ingredients and gently brush this mixture over the broiled eggplants.
try making a stuffed poblano pepper. 1 package of cream cheese. 2 sun dried tomatoes chopped, minced garlic 1/2 teaspoon, 1/4 cup shredded cheese {your favorite, i like hot pepper or sharp cheddar}, and small can of green chilies, drained. mix together in bowl. cut top off of pepper and get seeds/membrane out. put mixture in pepper, about 3/4 of the way into pepper. put a light coat of oil on pepper skin, and bake at 400 for 10-20 minutes. enjoy. store leftover mixture for other things.
