I dip the chicken in flour, then egg mixed with hot sauce. Then shake in a bag with flour, spices, S&P, and cornmeal or breadcrumbs (whatever I have).

I oil a cookie sheet, heat in 425 oven til hot, then place the chicken on so it sizzles right away. Cook for about 20 minutes, turning once.

**Before cooking, let breaded chicken sit and rest for 20 minutes. Helps the breading adhere.

Well, What I do is put extra virgin olive oil Spray (non stickin and you won't have oil or butter on the chicken.) with alum (Sp) foil on the pan. And up the chicken down. and cook it.

One of my favorite ways to get crispy chicken out of the oven is to use bread crumbs or crackers (like Ritz) as breading. Just crush them up and add your favorite spices. You can avoid the fat and oil by dipping chicken in egg or buttermilk before breading. I have used Jalapeno sauce to make the crumbs stick.

im glad you asked this question. ok first you dip the chicken in raw egg and then in a bowl of flower mixed with your favorite spices. then to cook them use a pan that has an underpan that grease will drain into and bam you have good tastin chicken with less fat.

oil & butter are good for you! just use non hydrogenated and grass fed butter! Coconut oil is super good for you, unrefined. Try it out, is so healthy. Cures tons of stuff!!!

This one is a little involved but is most healthy because you don't have the skin. Soaking it in the broth keeps it moist and the icy coldness helps the breading stick.

There are other "oven fried chicken" recipes that deal with using the skin but the skin is bad to eat if you are watching fat. I say to discipline yourself to eat just a taste of the skin and throw away the rest. But that is hard to do.
