My option is to look whats left in the fridge, as at the moment I'm very skint. I think i might have a couple of packs of sausages, tins of beans and eggs. That's our tea sorted, with a few chips. Hope this helps.

HONEY PECAN PORK CHOPS


1 1/4 pounds boneless pork loin, pounded thin
1/2 cup all-purpose flour for coating
salt and pepper to taste
2 tablespoons butter
1/4 cup honey
1/4 cup chopped pecans


Directions

1. In a shallow dish, mix together flour, salt and pepper. Dredge pork cutlets in the flour mixture.
2. In a large skillet, melt butter over medium-high heat. Add chops, and brown both sides. Transfer to a warm plate.
3. Mix honey and pecans into the pan drippings. Heat through, stirring constantly. Pour sauce over cutlets

4.) Serve with a nice salad and enjoy

What do you have left in the cupboards?
Pasta is always a great item to use, I find, when I can find little else! When myself and the husband get back after a long day at work, it's just the perfect dish. Fast, filling, and healthier than grabbing a takeaway on the drive home!
What I would do, is use whatever meat you have. Be it bacon, chicken, pork, whatever. Fry the meat until brown. In the meantime cook up some pasta. Pop the kettle on and using a stock cube, make up half a pint of stock. Add to the browned meat, and simmer. This will reduce the amount of liquid and thicken.
In the last few mins, add some single cream to the meat. Then serve with pasta!

we are having good old sausage & mash, but you could do stir fry,or stew with yorkshire puds, Chile con carne with jacket potato

Chicken and pineapple salad



Ingredients :
1 large roast chicken/ four chicken breasts
1 fresh pineaple
1 large Granny Smith apple
250g celeriac
1 lemon
1 tablespoon brown sugar
1 lettuce

For the Sauce :
2 egg yolks
1/2l oil
1 tablespoon mustard
Juice of 1 lemon
100g crème fra?che
Salt, Cayenne pepper

Recipe :
Wash and dry lettuce.
Wash but do not peel the apple, cut into small pieces.
Peel the pineapple and cut it in half.
Peel and grate the celeriac, put in a large bowl with the fruit, sprinkle with lemon juice and dust with sugar.
Mix and leave to settle for 15 minutes.
Take the skin of the chicken and cut flesh into slices.
Make a lemon mayonnaise, salt and add cayenne pepper to taste.
Whip the cream and add to the mayonnaise to make it creamy.
Pour into a sauce boat or jug, chill.
Mix the chicken, fruit and celeriac, line a salad bowl with lettuce leaves, chill for an hour.
Serve with sauce.
