What to do about my chocolate cheesecake?!


Question: As directed, I baked the chocolate cheesecake until the center is almost set... I really don't know what almost set. Anyway, it has cooled for half an hour now, the center looks softer so I inserted a knife and found that it is liquidy! Do I stick the cake back in the oven despite it being almost cool, or will it set?

Yes you can. I've had to send things (like ginger cake loaves) back to the oven when they weren't as done as they appeared. Just check with a toothpick or knife that comes out clean when inserted in the middle (straight up and down) next time. Depending on how cool the cake and the oven, probably cook an additional 15-20 minutes.
