Is 'brisket' the same as corned beef or silverside? (Australia here !)?!
Answers: corned beef is brisket thats been "corned"...its been covered in certain spices and left to corn in these spices overnight or for days...but yes...its the same cut of meat
Corned beef can be any cut of beef that has been marinated in a corning solution, and spices. Usually the brisket is corned.
Brisket is a cut from the front chest of the cow. It is fatty and needs slow cooking. It is not always sold corned, sometimes it is sold as a fresh cut so you cant assume that corned beef and brisket are going to be the same thing.
It is not the same as corned silverside as that is a totally different cut of beef.
Basically - 'Brisket' refers to a cut which may or may not be corned. 'Corned' refers to a curing process and is not cut specific.
The brisket has been pickled in a brine and sold in stores as corned beef. This is what people buy and bake for St Patty's Day....
or when they want corned beef and cabbage. It is also what people buy in the deli case for Rueben sandwiches.
Hope this helps a little.
