take cheese grater, grate potato,if for later ,hold in water.cooking now, rinse and dry, cook in grease laden fry pan, don't disturb till it's time to flip

Americas test kitchen did a segment on hash browns, look there.

Choose good quality potatoes that are firm (not spongy) and refrigerate overnight. Get a grater and coarsely grate the potatoes, then toss in a bowl with some oil or melted butter before frying, making sure the shredded potatoes are lightly coated with the fat. Fry quickly on a hot IRON pan that has been lightly greased with a high temperature fat like unflavored peanut oil or Crisco. Fry on one side until golden brown at the edges, then flip once and fry on the other side, just like you're making pancakes. Do not let the shredded mixture sit out too long uncooked or the taters will turn a grayish color, and do not add salt until right before cooking or they'll get watery and mushy. Also make sure the potatoes do not have green skins. The cheap ones sold in bags often do.

Shred with cheese grater on in food processor?
maybe start with oil(veggie) then some diced onions, add potatoes and top with chop up chives...
when serving a dollop of sour cream on side top with shred cheese(packets) cheddar.. on the side couple fired eggs..?

You will need three or four med to large potato's, 1 deep skillet, a hand held food grater,1/2 cup oil.
Some people peel potato's,some don't. peel potato's if choose, shred with grater, rinse with cold water.
Pour oil in pan when it it beginning to get hot, start adding potaoto's,they will start to cook immediately.(Like fried potato's or french fries)When bottom is brown, flip over, repeat as needed, til done.remove onto paper towels or regular dish towel to absorb the gease. than serve with what[ever else your having.Don't forget to add salt and pepper and onion salt to them as they are cooking..
