BREAD PUDDING I
INGREDIENTS
2 apples
8 cups bread cubes
1 cup half-and-half cream
1 cup white sugar
1/2 cup milk
2 teaspoons ground cinnamon




DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Peel, core and cube the apples.
Lightly grease a 13x9 inch baking pan. Cover the bottom with half of the bread cubes and then sprinkle on half of the apples. Repeat with the remaining bread and apples.
In a large mixing bowl combine the cream, sugar, milk and cinnamon; beat well. Pour this mixture evenly over the bread cubes and apples.
Bake at 350 degrees for 35 minutes. Serve hot


BREAD PUDDING II
INGREDIENTS
10 slices white bread, cut into cubes
1/4 cup margarine, melted
1/2 cup raisins
1 teaspoon ground cinnamon
6 eggs
3/4 cup white sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
3 cups hot milk

DIRECTIONS
Heat oven to 375 degrees F(190 degrees C)
In a large bowl, combine bread cubes, melted margarine, raisins, and cinnamon; mix well, and transfer to a 2 quart baking dish.
Use the same bowl to beat the eggs. Stir in sugar, vanilla, and salt until sugar is dissolved. Slowly whisk in the hot milk. Pour egg mixture over bread cubes, sprinkle with nutmeg, and set aside to soak for 5 minutes.
Bake in preheated oven for 25 to 30 minutes, or until a knife inserted into the center comes out clean.

You're out of luck. Bread pudding has 4-5 eggs in it. Make another kind. For instance, you can line a greased bowl with slices of bread, spread fruit (juicy berries work best) all over it, more bread, more fruit until bowl is full. Put more bread on top. Put something heavy on bowl to hold it all down. Refrigerate for a few hours. Turn upside down onto a platter and serve, with or without whipped cream. Good luck.

My Grandpa used to tear bread up and put into a glass with milk, sugar and a very little bit of vanilla, I've eaten and it is very good. People that didn't have a lot of money during the depression used to do this all the time.

Easy Bread Pudding
Always a classic!

Ingredients:
4 cups Cubed day-old bread, such as raisin, sourdough, or oatmeal
2 cups Skim milk, scalded
3/4 cup Each: fat-free egg substitute, packed dark brown sugar
1 tsp. Vanilla
1 tsp. Brandy or rum, optional
Confectioners' sugar, optional

Preparation
Heat oven to 350F. Coat a 2-quart nonstick baking dish with cooking spray. Place cubed bread in baking dish and set aside. Combine milk, egg sub, brown sugar, vanilla, and brandy and pour over bread cubes in dish. Bake for 35-40 minutes, or until set. Cool on wire rack for 10 minutes. Lightly dust with convectioners' sugar, if desired.

Cook's Notes
This is delicious served warm or cold. Low-fat, as well-155 calories and 1g fat per serving.

Look up capirotada, or Mexican bread pudding. There are lots of variations, some made without eggs. Here's one I found but haven't personally tried:

3 cups of water
3 large cinnamon sticks
3 to 4 Pilloncillos (if not available you can substitute 1 1/2 cups brown sugar)
3 to 4 oz raisins
4 bolillo rolls (found in Mexican markets) or 1 loaf french bread, cut into pieces
1 cup shredded cheddar cheese

Method
In a saucepan, bring water, sugar and cinnamon sticks to a boil then reduce and simmer for 10 minutes. Break bread into small 2 inch pieces (if using fresh bread you'll need to toast it beforehand) and place in a baking dish and sprinkle with raisins and half of the shredded cheese. Strain the syrup liquid, removing the cinnamon sticks, and pour the syrup over the bread until well absorbed. Top with remaining cheese and bake at 350 for 20-30 minutes or until syrup is absorbed. This dish may be served warm or cold and topped with fresh whipped cream or ice cream. Enjoy!
