Sopapillas won''t puff???!


Question: Made the recipe 2 days ago and they puffed like balloons. Made it again last night and they didn't puff!! Only thing possibly different is that I lowered temp of oil as previous batch was cokking too fast and nearly burning. Maybe need higher temp for puff??

Your oil temp always has to be high (but not too high obviously). I've had this problem and my grandmother said to use less flour and she was right!

It is most likely temp of oil when fried. Use an oil that has a high burn point such as peanut oil - there are several with high burn points - check with your grocer he/she will know.
