Need help with pancakes....?!


Question: I searched the resolved questions, but could not find anyone having the same issue as me, so forgive me if this feels like a repeat......Every time I make pancakes, they are too thick and instead of having that "springy" texture, they are almost "cake-like". To put it mildly, they are BAD. Thanks for your input.

You don't say if you are making them from a mix, or from scratch. That would be important information to offering the best suggestions.

I always make them from scratch, so that informs my answer. Light and fluffy pancakes, maybe what you mean by "cake-like", are the result of minimal mixing. To get the more "springy" texture, work the batter more (mix it longer). Now, this will give a more chewy texture, but there's a fine point where you need to determine to stop, because overmixing will also make the pancakes tough. Experience will tell you when you have mixed enough for the kind of pancake you want.

Sounds like good pan CAKES to me. lol They're supposed to be fluffy and cake like.

If you want thin pancakes, just add more water to the mix to thin them out.

Next time, do what my husband and I do...buy the frozen Pillsbury pancakes (there are other brands too). Just pop into the microwave the amount you want. See directions for cooking time. They are delicious. I no longer make pancakes because the frozen ones are so good.

usually this happens with the eggs you add ,sometimes its just too much! also the batter may not be wet enough,so,
when you say cake think egg's -solution add more liquid,CHECK FOR -CONSTANT-MEDIUM LOW HEAT ON GRIDDLE ! also do not flip more than once ,wait for most of the bubbles to pop and edges look crisp !
next time try with small dollar sized pancakes and time for best !
even though cakes seem easy all take some practice to perfect !

I use bisquick mix most of the time. Use milk and eggs in your recipie (not water ... or not just water). If it is too thick, add a little bit more milk. When you pour the pancake on the griddle use the spoon to make the cake thinner and even, when it bubbles flip it.

You're talking about "hotcakes". Pancakes (pannekoeken) are a Dutch recipe. Not unlike French crepes. They're thin and not "fluffy" at all.
