My frozen pie crust dough, when baked, turned out gritty ruining my pies. What happened?!

Question: I made my crusts from butter flavored shortening, sifted flour, rolled them out and put saran wrap between the crusts and then put them in freezer paper, into the freezer, airtight. When I baked them in pies, the crusts were gritty tasting. My unfrozen crusts never had that problem.

you might have over-worked your pi-do,..if you want crispy, flakey dough, do not work it so much

Great question, I wonder if it is something in the butter flavored shortening? Or perhaps the flour wasn't sifted enough? Maybe freezing changed some chemistry?

u might not have let the
crusts completeley thaw
before using them
maybe?
