Roasted Sweet Potato Fries or Rounds

2 large sweet potatoes
1 tablespoon olive oil
1 tablespoon butter, melted
salt

Scrub the sweet potatoes, leave unpeeled, and cut into fries or rounds. (Trust me, rounds are much easier!).
Combine olive oil and melted butter.
Arrange the potato slices, not touching, in rows on a baking sheet.
Lightly brush the potatoes with the oil mixture; being careful to not use too much or the fries get mushy.
Roast at 450°F for 18 to 22 minutes, or until they are golden and crisp, turning them once with a spatula.
Transfer the potatoes to paper towels to drain, sprinkle them with the salt to taste, and serve them warm.
Note: can be sprinkled with cinnamon sugar instead of salt.

easy. bake in the microwave the same as an irish (baking) potato, a small for 5 minutes, or till it starts to smell good. put on your plate. slice open and add butter, brown sugar, and a little bit of nutmeg or cinnamon.

make sweet potato fries. just cut them up like regular fries and bake them with a little oil, salt, and pepper.

Just slice it up after cooking and add a little margarine. It will taste wonderful.

After roasting them in the oven until they are soft( about 60 minutes). Let them cool a bit, than peel them and mash them. Add some milk or cream to them along with some cinnamon or pumpkin pie spice. If you want add some splenda(sugar substitute) to them. They now will taste almost like pumpkin pie without the crust. YUMMY!

this things are just wonderful and healthy baked in the oven until they get really soft. when you can put a fork through them and them flake / aren't hard and are soft / they are ready to eat. i can't imagine putting anything on them . they are perfect just the way they are intended and healthy. a lot of people like a little brown sugar. they mix a tiny bit of cinnomin into the brown sugar for extra flavor. you could add a little tiny bit of real butter ? i don't think that it adds too much to the flavor / isn't worth the calories.. but that is totally your call. they are also great when you prepare them into tiny slices / almost like potato chips and then fry them . sweet potato chips. they are great with hamburgers/turkey burgers for a change. enjoy!

Maybe it's just me, but if a food item needs "fixing" I tend to just skip it.

Two potato hash browns are nice. Just use equal quantities of both normal potatoes & sweet potatoes to make your hash browns in the usual manner.

I like to bake them in oven for 1 hour at 350 degrees. I don't like sugar on my sweet potato too. You can sprinkle tiny amount of salt or garlic salt. Simple and healthy.
