as a food service professional I would say, if you are haveing 750 over you should have started preping food about a week ago. I would do cocktail whinnes, finger sandwiches, mini quches, cookies, a few small plated deserts like cake or pie and ofcorce nuts. you also might do dips and chips. I would do a spinich dip and a salsa both served with corn chips. you might do a hot artachoke dip with triscits. In any event, you will need lots of food and it will be lots of work.

16 slices mini pumpernickel bread
1/4 pound thinly sliced Swiss cheese
2 plum tomatoes, sliced
Salt and pepper
2 tablespoons chopped chives or 2 scallions, chopped

Lay out 8 slices of mini pumpernickel bread. Cut sliced Swiss cheese into pieces that will fit bread. Layer cheese and sliced tomatoes on bread. Season with salt, pepper, chives and place another layer of cheese on tomatoes. Top sandwiches with another slice of bread. Brush griddle or skillet liberally with oil and butter. Grill and toast sandwiches 2 or 3 minutes on each side. Transfer grilled cheese and tomato sandwiches to warm oven. Wipe griddle or skillet clean.

Here are a few recipes:

CAROL’S MUSHROOM MEATBALLS (Not a hard recipe-double it)

1-1/2 lbs. ground beef
2 eggs, slightly beaten
2/3 c. grated parmesan cheese
1/2 tsp. oregano
1/2 tsp. parsley
1/4 tsp. thyme
pepper to taste
1 Can Campbell's Cream of Mushroom soup
1 can sliced mushrooms with liquid
1/3 c. half and half
4 heaping tbsp. sour cream
mashed potatoes or rice

Mix the ground beef, eggs, cheese and seasonings and shape into 1-1/2 inch meatballs. In a large skillet, brown the meatballs slowly on all sides in a little hot oil. Stir frequently. Cook for 15-20 minutes. Drain off excess fat, leaving a little in the pan. Pour the soup into the skillet with the meatballs, adding 1-2 can of water. Stir well. Add the half and half and the sour cream slowly, stirring to blend. Simmer on low heat uncovered for about 20 minutes. Add mushrooms with liquid and cook for 5 minutes. Serve over mashed potatoes or rice with your favorite vegetable, crusty bread and butter, and a fruit gelatin for dessert. Serve with toothpicks.

COCKTAIL FRANKS (Double or triple the recipe)

Unroll Refrigerated Quick Crescent Dinner Roll Dough and separate into 8 triangles. Split each frank and insert a quarter slice of cheese into each. Place one frank on each triangle and roll up, starting with the wide side and point is at top. Place rollups on greased cookie sheet, cheese side up. Bake at 375 F. for 10-13 minutes until golden brown. Serve hot. Makes 8.

BACON-WRAPPED SCALLOPS (Double or triple the recipe)

48 lg. sea scallops (about 4 lbs.)
24 slices bacon
Seasoned pepper

Rinse scallops with running cold water, pat dry with paper towels. Cut each bacon slice crosswise in half; wrap each half around a scallop, securing with a toothpick. Sprinkle scallops lightly with seasoned pepper. Preheat broiler. Place scallops on rack in broiling pan, with bacon. Broil 8 to10 minutes until scallops turn opaque throughout, using tongs to turn scallops frequently so bacon will brown evenly on all sides.

CARIBBEAN CRAB CASSEROLE (Two or more)

8 oz. crabmeat
1 1/4 c. low fat milk
1 tsp. garlic salt
1 tsp. thyme
1 1/2 c. cooked rice
1 c. chopped celery
1/2 c. shredded coconut
8 eggs
1 tbsp. lime juice
1 tsp. curry powder
1/4 tsp. ground red pepper

In large bowl beat together eggs, milk, lime juice, garlic salt, curry, thyme and red pepper, blending well. Stir in cooked rice, celery, crab meat and coconut. Pour in greased 1 1/2 quart casserole. Bake at 350 F. in oven for 50 to 60 minutes, or until knife inserted in center comes out clean.

ROASTED CLAMS WITH GARLIC BUTTER

6 pounds clams in shells
3/4 pound butter or margarine
3 ounces Garlic Juice

Melt butter and add the Garlic Juice. Stir and keep warm over a low heat. Wash clams thoroughly under cold running water to remove any foreign particles. Arrange on a baking sheet. Roast clams at 450 F. for15 minutes or until clams open. Serve hot in the shell with garlic butter.

CREOLE FRANKS (Double or triple the recipe)

5 slices bacon, diced
1/2 c. onion, chopped
1 c. unsweetened pineapple juice
3/4 c. catsup
1/8 tsp. chili powder
1-1/2 lbs. frankfurters, sliced
1/4 c. green pepper, chopped

Cook the bacon in a large skillet, but do not crisp. Add onion and cook until tender. Add green peppers. Cook 2 minutes. Stir in pineapple juice, catsup and chili powder. Add frankfurters and simmer for 10 minutes.
