I love broccoli salad....do you have a good recipe to share wit me?!


Question: Broccoli Salad Recipe
4 cups broccoli chopped into 1 inch pieces
1/4 cup finely chopped red onion
1/4 chopped celery
1/4 cup raisins
1/2 cup raw unsalted sunflower seads
1/2 lb. bacon, cooked and crumbled
1/4 cup white sugar
3/4 cup prepared salad dressing
2 tsp. cider vinegar
salad and freshly ground black pepper to taste

Place the chopped broccoli in a large serving bowl. Mix in the onion, celery, raisins, sunflower seeds and bacon. Combine the sugar with the salad dressing or mayonnaise. (I use low-fat and it tastes just as good) Add the vinegar and season with salt and pepper. Pour over the salad and toss until well combined. Refrigerate for a few hours before serving.

8 slices bacon
2 heads fresh broccoli, chopped
1 1/2 cups sharp Cheddar cheese, shredded
1/2 large red onion, chopped
1/4 cup red wine vinegar
1/8 cup white sugar
2 teaspoons ground black pepper
1 teaspoon salt
2/3 cup mayonnaise
1 teaspoon fresh lemon juice

DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
In a large bowl, combine broccoli, cheese, bacon and onion.
Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

I make my own version, and easy...

1 pkg broccoli and cauliflower
colby jack cheese - crumbled or cut into small cubes
1 small shallot chopped small
real bacon bits (you choose how much)
I toss with ranch dressing

**Confirmed broccoli haters have changed their minds after tasting this salad. It is great for potlucks or buffet meals. Make a day or so before you wish to serve to meld the ingredients.

2 Heads Broccoli
Hellman’s Mayo (to taste)
Hidden Valley Ranch Dressing (to taste)
1 Jar Real Bacon Bits
? Package Cracker Barrel Sharp Cheddar Cheese
? Small Vidalia Onion
Salt & Pepper

Pull broccoli from stems and steam. Broccoli should still be crispy. Refrigerate when done. Shred the cheddar cheese and set aside. After broccoli cools, add mayo, ranch, bacon bits, onion, cheese, salt and pepper. Mix together and refrigerate until ready to serve. YUMMY!
