Anyone have a good recipe for borscht?!

Ingredients:
1 Head cabbage, chopped fine
1 Onion, chopped fine
1 Meaty soup bone
*OR*
1 pound Boiling beef
Salt
1 can Tomato paste (6 oz)
6 Tomato paste cans of water
1/2 cup Brown sugar
Juice from one lemon

Directions:
Place the cabbage and onion chopped fine into the pan with meat. Add a dash of salt and half a box of brown sugar. Cover and cook over low heat until the cabbage shrinks and is almost tender. Add the tomato paste mixed with the water. Add the juice of the lemon, Mix well. Cover and cook over low heat for about 1 1/2 hours. Taste while cooking and add more sugar according to taste. If the soup is too thick add some water. If the soup is too thin, add a little flour mixed with water to make it thicker.

This is one of my favorite recipes. It is a hearty robust soup with great flavor.
Serves: 4
2 lbs fresh beets peeled & grated
1 lb beef stew meat
1 tablespoon sea salt
3 cups canned or fresh tomatoes peeled, seeded and chopped
2 cups yellow onions chopped
1 head green cabbage shredded
1 fresh carrot peeled and diced
1 bunch fresh dill weed chopped fine (reserve one Tbs or a few small sprigs for garnish)
Salt and pepper to taste
1/4 cup Russian-style sour cream
Prepare the beets: Put beets in pot and cover with cold water. Cook over medium heat; bring to boil and then turn down to simmer. Simmer for about 20 minutes. Remove from heat and reserve. When the beets are cool enough to handle, simply rub off the skins. They should slip off easily. Grate the beets on a large-hole grater and reserve. This can be done one day ahead. Cover and refrigerate until ready to use.
Prepare the Soup: Brown the beef on all sides, add salt and cold water to cover. Bring to a boil, reduce to simmer and cook uncovered for approximately 1-1/2 hours. (You may also cook in a crockpot overnight and finish the following day.) Add more water during cooking if necessary. Add tomatoes, cabbage, carrot, onions, and dill to beef and simmer uncovered for approximately 30 minutes. Add the beets and heat for about 10 minutes. Season with salt and pepper to taste.
To serve: ladle into soup bowls and garnish with a dollop of sour cream and fresh dill. Serve with dark rye bread or course country bread.
