I really like those "SMASHED" potatoes. Do you have a great recipe you could share with me?!
4 large potaotes
1 tablespoon extra-virgin olive oil
2 tablespoons butter
4 cloves garlic, chopped
4 scallions, chopped
1 cup ricotta cheese
1/2 cup milk
1 cup shredded or grated Parmigiano Reggiano or Romano cheese
Peel potatoes and cut them into small chunks. Place potatoes in a pot and cover with cold salted water. Bring potatoes up to a boil over high heat. Cook until tender. Approx. 15 minutes. While potatoes are cooking, in a small pan over medium heat add vegetable oil and butter. When butter melts into the oil, add chopped garlic. Saute garlic 1 to 2 minutes, the add scallions and remove pan from heat and reserve. Now that the potatoes are done, drain then return to hot pot . Add the reserved garlic and scallion mixture to the potatoes along with the ricotta, milk and grated cheese. Smash with a hand masher until all is combined. Season your Delicious Smashed Potatoes with salt and pepper as desired.

Boil potatoes until almost crumbly,
drain and then mash, adding butter, cream and milk and then a tiny amount of mustard.
Mash to a creamy mix and then serve with sausages and onion gravy.
Smashe potatos are just like mashed potatos except you leave the skins on. You can also add stuff to them to make them taste good without gravy.
I like roasted garlic, onion, cheese, sour cream, bacon, chives, rosemary, thyme, cream cheese, or really anything else you can think of.
Just pick a bunch of stuff that you think would be good and throw it in. Cooking is about being creative. +
I make smashed potatoes with new or red potatoes. Boil 8-10 potatoes with the skins on for about 20 minutes add a little salt. If larger than a ping pong ball cut in half. Then I melt 1/2 stick of butter and add minced garlic from a jar (not as potent as fresh) about 1 teaspoon. pour over drained potatoes and smash with a potato smasher lightly to keep some of the potato pieces (do not mash entirely) 4 servings
garlic is optional
Two to try:
1. Don't smash 'em but dice 'em and then boil 'em until fork tender. Then serve 'em with ranch dressing instead of margerine or butter.
2. Peel 'em and boil 'em and then for each cupful of mashed 'taters stir in an eighth of a teaspoonful of garlic powder, a tablespoonful of shredded cheddar cheese and top with diced cooked bacon. If you like broccoli, chop some of that up fine and stir a tablespoonful of that into it too.
What I do with the second recipe is bake the potatoes whole, then halve 'em lengthwise, scoop the flesh out of the skin, mix all the ingredients above into the flesh and pile it back into the skin halves and put it back under the broiler for 12 minutes. It's called "twice-baked potatoes". Feel free to modify the amount of broccoli and garlic to your particular tastes. If you don't care for garlic, try onion powder.
Depends on how much you are making but this is my general recipe.
4 - 5 large red skinned potatoes cubed. Boil them until they are tender in salted water. Drain and put them back in the pot. Add 1/2 stick melted butter and about 1/2 bottle of ranch dressing, more salt and pepper. Taste for seasoning.
They are good like this, but I generally add French's french fried onions then bake for about 1/2 hour in a 350 oven. Then top with cheddar cheese and bacon and bake for about 15 minutes more. Delish!
